Surinamese Nasi is a fried rice dish from Suriname which was brought over by Indonesians. The fragrant rice dish is a popular dish in Suriname.
What you need (approx. 6 servings) : 4 tbsp ground urdi (bean flour) (available at exotic grocery stores) 2 tsp cumin seeds 250g wild spinach, finely chopped 3 cloves of garlic, finely chopped 1 Madame Jeanette chili pepper, seeds removed, finely chopped 3 tsp massala curry powder 450g white bread mix 1/2 tsp salt sunflower oil flour Mix the ground urdi (bean flour) with 100ml hot water and soak for 10 mins. Fry the cumin seeds for a few mins in a dry pan. Mix the bread mix, salt, fried cumin seeds and massala curry powder in a large bowl. Add 200ml tepid water and the soaked bean flower to the mixture and knead to a dough. Add spinach, garlic and chili pepper and knead well. Add water if the dough is too dry or some plain flour if the dough is too wet. Cover the bowl, put it at a warm place and let the dough rise for approx. 20 mins. Divide the dough into small balls and roll them out on a flour-covered surface with a rolling pin until the pancakes are approx. 1/2 cm thick. Make a hole in the middle of each pancake. Heat oil in a wok and deep fry the pancakes. Drain on kitchen towel. Serve with massala chicken, salad and/or tomato chutney.

I'd been hesitant to try this until a former colleague of mine brought pom rolls to work as a birthday treat instead of the obligatory cake. To my own surprise, I loved it! I got the recipe from another colleague, made some minor adjustments and now make this on a regular basis. It freezes well too, so I divide it into single portions with some rice and veggies for busy days. What you need (approx. 8 servings): 1kg grated tayerroot, thawed (frozen, sold at exotic grocery stores) 400g chicken breast in strips 0,5 jar piccalilly 1 small can tomato puree 1 tomato, cut in cubes 1 medium onion, diced 2 cloves of garlic, pressed 2 stalks of celery juice of 2 oranges, or 1 glass of orange juice 1 glass of water 1 chicken stock cube 1 tbsp sugar 1 tsp allspice salt, pepper sambal oelek (chili paste) to taste oil + knob of butter Heat the oil and butter, and fry the chicken until golden brown. Add onion, garlic and sambal oelek, and sautée until the onion is translucent. Add orange juice, water, allspice, tomato, puree, stock cube and celery and let simmer for approx. 25mins. Pre-heat the oven at 200C. In a bowl, mix the sugar and piccalilli with the grated tayerroot. Take the chicken out of the sauce and mix the sauce gradually with the tayer mixture. Grease a casserole dish and pour in half the tayer mixture. Spread the chicken evenly over the tayer mixture and cover with the rest of the tayer mixture. Cover the dish with aluminium foil and bake for at least 1 hour. Take off the foil and bake for at least another half hour until the top is brown and set. Serve with rice and stir-fried green beans (yardlong beans or 'kouseband') or on a white roll (‘broodje pom’)

Fladder is a Surinamese creole delicacy. It's beef tripe boiled in a stock made from madam Jeanette peppers and some greens. It's incredibly tasty but finding a recipe proves difficult because few people (outside Surinam) like it. I couldn't find a photo but in this video clip called Boriman (Sranang Tongo for 'cook') you see a pot with fladder at 0:50 minutes. Never mind the cocaine. Update 18/09/10: Went to Dappermarkt and ordered a small (4 euro) fladder, vleesworst, bloedworst and very spicy yellow pepper. In the stock there were no greens but there was quite a lot of star anise. I found just one poorly written recipe on a forum. Wash the tripe. Doesn't say how. Clean with vinegar? Add water to a big pot and bring to a boil. Add salt, bay leaf, onion, celeriac leaf and "other" soup vegetables, black pepper, ordinary (?) pepper, stock cube (possibly Maggi) and pepper (presumably madam Jeanette). Add meat stock, tripe and simmer on a low fire for a long time. The recipe doesn't mention any quantities. Traditionally fladder is cooked with Suriname vleesworst (meat sausage) and bloedworst (blood sausage). Both sausages should not boil otherwise the skin might burst. Add at the last moment (if used). I did find the recipe for Suriname vleesworst: 1 kilo minced meat (half beef, half pork), 2 speklapjes met zwoerd (thick slab of bacon), 2 onions, 3 cloves of garlic, fresh pepper (chili), 4 twigs celeriac leaf, 1 egg, 5 slices of old bread soaked in milk, 2 beef stock cubes, 2 teaspoons salt, 4 teaspoons sugar, black pepper, ajinomoto, pigs intestines. Clean intestines in vinegar and run though water. Fry onion, garlic, pepper, celerica leaf. Cool. Mince speklap, mix with: minced meat, spices (stock cube, salt, sugar, black pepper and ajinomoto), egg, bread and onion mixture. Fill intestines with meat mixture and steam 30 to 50 minutes. Note: Ajinomoto is a Japanese brandname of monosodium glutamate, a flavour enhancer.
