Ci sono alimenti che più di altri mi danno energia e mi mettono di buonumore. In cima alla lista sicuramente compaiono i fichi che adooooooooro e le noci altrettaaaaaaanto;-) Ebbene... quando (poche volte direi) avanza qualcosetta per casa di entrambi... -giusto per caso eh...- quando vedo che se ne stanno lì castigati in una ciotola di fortuna in attesa che la sottoscritta passi da quelle parti, penso "oggi proprio devo, sì devo studiarmi qualcosa prima che finiscano dinuovo" anche perchè, poi, dove li vado a pescare altri fichi? Se aspetto ancora un po' si fa inverno... e già mi ritengo fortunata per averne trovato una manciata in ottobre... ah vita dura per noi buongustai! Per non parlare del fatto che "chi c'ha pazienza di aspettare un altro anno?". Alla fine mi son presa una mezz'oretta ed ho ottenuto questo: un semifreddo, perchè no? SEMIFREDDO ALLE NOCI CON FICHI CARAMELLATI INGREDIENTI per 8 porzioni: 4 tuorli 2 albumi 50 gr. di zucchero di canna 40 gr. di cioccolato fondente al 70% 20 ml. di rum 50 ml. di acqua 250 gr. di panna da montare Per il croccante alle noci: 100 gr. di noci sgusciate 100 gr. di zucchero di canna 10 ml di acqua Per i fichi caramellati: 6 fichi (non troppo maturi) 50 gr. di zucchero di canna 10 ml di acqua PREPARAZIONE: Croccante alle noci: ponete in un tegame lo zucchero di canna e l'acqua, fate caramellare a fuoco dolce e poi unite le noci. Cuocete ancora un minuto amalgamando bene tutto e stendetelo con una spatola su un foglio di carta forno; fate raffreddare. Semifreddo: sbattete con una frusta i tuorli con lo zucchero, l'acqua e il rum in una casseruola, mettete sul fuoco e raggiungete la temperatura di 85°; fate raffreddare il composto in una planetaria utilizzando la frusta. In un cutter, riducete in granella fine il croccante di noci. Montate la panna “lucida” (cioè poco montata e quindi non fermissima), montate anche gli albumi e tritate grossolanamente con un coltello il cioccolato. A questo punto unite alla montata di uova la granella di noci, il cioccolato tritato, la panna montata ed infine gli albumi. Versate il semifreddo nelle formine e fate indurire nel congelatore per almeno 4 ore. Poco prima di servire il semifreddo ponete in un tegame lo zucchero di canna e l'acqua; fate sciogliere a fuoco dolce finchè non caramella, poi unite i fichi tagliati a spicchi, girateli su ogni lato per un paio di minuti al massimo e serviteli accanto al semifreddo.

My love for Turkish delight knows no limits. Remember in The Lion, The Witch and The Wardrobe when Edmund couldn’t say no to a Turkish delight treat from the white witch? I really felt for the guy – he was me incarnate. There is something about the rose taste, the pink colour and the gelatinous silky texture of it in your mouth that is truly delightful and impossible to say no to. I’ve combined it here with a few other loves – meringue, fresh raspberries and pistachios in a roulade. Roulade is a dessert weapon. It looks super fancy but really is very simple to make. You can make the meringue part in advance then smear the fillings and roll just before serving. Pistachio, Turkish Delight and Rose Roulade Serves 6 Ingredients 6 eggwhites 1 ¼ cups caster sugar 1 tbsp cornflour 1 tsp lemon juice 2 tsp rose water 2 tbsp icing sugar, sifted 2 tbsp pistachios, crushed 1 cup double cream 1 cup Turkish delight, cut into bite-sized pieces 1 cup fresh raspberries ½ cup cup pistachio kernels Method To make the roulade, preheat the oven to 170ºC. Line a Swiss-roll pan with baking paper. Grease the paper. Beat the egg whites in a large bowl with an electric mixer fitted with a whisk at high speed until soft peaks form. Gradually add in half the caster sugar then beat in the remaining caster sugar until stiff, glossy peaks form. Fold in the cornflour, lemon juice and rosewater. Spread the meringue evenly in the prepared pan. Bake for 20 minutes, or until pale golden, then allow to cool for about 1 hour. Place another sheet of baking paper on a work surface and dust with icing sugar and crushed pistachios. Turn the meringue onto the baking paper. Carefully remove the top sheet of paper. For the filling, beat the cream until soft peaks form. Spread the beaten cream over the meringue with a palette knife. Sprinkle the raspberries, Turkish delight and pistachio kernels over the cream. Use the paper to help you roll up the meringue from the short end. Ease the roulade, seam side down, onto a serving dish and refrigerate for 1 hour. To serve, cut slices and place lying down on a serving plate.

Dodać cukier i dalej miksować, dodać jajka, aromat i stale miksując dodać mąki oraz sól.Miksować do uzyskania gładkiej masy. Masę przełożyć do maszynki do ciastek lub rękawa cukierniczego ( trudniej wyciskać). Na blachę położyć papier do pieczenia, w niewielkich odległościach wyciskać ciasteczka. Na ciastka położyć kleksy marmolady, dżemu, posypać cukrem lub posypką - wedle uznania. Piec około 12-15 minut w temperaturze 180st. Ciasteczka będą wydawały się miękkie, ale dojdą podczas stygnięcia. * Mąka ziemniaczana nadaje tym kruchym ciasteczkom piaskowości. Jeśli nie lubimy takich należy ilość mąki zmniejszyć lub nie dawać jej wcale

Je l’avais repéré il y a un moment, il me semble qu’on la voyait un peu partout sur les blogs. Sur le principe d’une brioche classique, la pâte crue est étalée, aromatisée, coupée en carrés que l’on empile et qui forment, une fois cuite, cette magnifique brioche gourmande. J’ai fait une version cannelle et citron que j’aime beaucoup. Vous pouvez choisir de faire une version 100% cannelle ou 100% citron.
Pour réaliser mes meringues au yuzu et grué de cacao, j'ai suivi la recette de Chef Nini mais aussi de Mercotte, testez vous verrez c'est hyper facile !
