I came to know about this Srilankan vegetable roti aka Elawalu roti few years back when we were invited to one of my friend's place for a get together few years back. This vegetable roti is served as a starter or for snack with a cup of tea in Srilanka. My friend's mom told that this roti was an imported snacks from South India. Earlier this roti was a restaurant food, but now its one of the most popular and famous snack food in all over Srilanka. You can enjoy this vegetable loaded roti from breakfast, lunch or snacks. In Srilanka this roti is enjoyed anytime of the day and its considered as one of the best midnight snacks as the rotis are panfried and can be heaten slightly in microwave oven anytime. Almost like our North Indian stuffed parathas, this rotis are stuffed with any sort of fillings, however i opted for a curried vegetable filling. If you are a meat lover, do prepare your favourite minced meat filling or minced fish filling to prepare this fantastic rotis. Shaped either as triangle or as rolls, this vegetable rotis will definitely please anyone's tastebuds. Recipe source: here & here For dough: 2 cups all purpose flour 1/4tsp Baking soda Salt to taste 1/4 cup oil Water to knead Filling: 3 Boiled potatoes (mashed) 1/2cup Carrots (chopped finely) 1/2 cup Cabbage (shredded) 1/4cup Leeks (chopped finely) 1/4 cup Onion (sliced) 1tsp Ginger garlic paste 1tsp Curry powder Few curry leaves Salt Oil Heat a pan, add the oil, sauté the chopped onions,curry leaves and ginger-garlic paste until the onions turns transculent. Add all the veggies and sauté until the vegetables turns half cooked. Add the curry powder,salt. Cook until the vegetables turns tender. Put the flame to low add mashed potatoes, cook everything in simmer until the mixture turns thick. Take the flour, baking soda, oil and salt in a bowl. Add water and knead everything as a soft and sticky dough. Add the oil to the dough and allow the dough to sit for an hour. Form golf ball size balls and coat them with rest of the oil and let them sit for atleast 2 hours. Roll the dough as a rectangular disc, drop enough filling to an edge of the disc. wrap the edges over the filling. Now shape it as a triangles as much as like folding the samosas.
