I have a load of egg whites in the fridge ^^. Well, I try to find the recipes to use it and this cookie is one of them. Actually, Cigarette Cookies and langue de chat cookies are the same. The difference is only the shape and size. Because when making Cigarette Cookies, we will make a larger cookie and roll the hot cookie into a cylinder shape. And it's cute because of its shape, hehe. Anyway, for making this cute cookie you have to pay for it, as you need to roll the cookie as soon as it comes out of the oven or the cookie won't be soft enough to roll, and yes, my fingers were burning! If you don't want to hurt yourself, you can choose an easier way by shaping the cookie batter into a smaller size (and don't forget the decrease the baking time), and you will get delicious langue de chat cookies instead. Keep the cookies in an air-tight box as this cookie will become chewy easily ^^. Melted unsalted butter Preheat an oven to 190℃ Put the egg whites, icing sugar, salt and vanilla extract into a bowl, and whisk to combine. Pour the cake flour and almond powder into the bowl, and whisk to combine. Pour the melted butter gradually into the bowl. Mix to combine. Spread thinly into a circular shape with the back of the spoon. About 12-13 pieces (12cm.) Bake in 190℃ Preheated oven for 8-9 minutes Roll the cookie (while it's still hot) with a chopstick.
