Ça y est enfin! J'ai mon moule à Angel cake. Un vrai, comme j'en rêve depuis des années. C'est un moule énorme et droit, en alu, avec une cheminée et un fond amovible. Il permet bien-sûr,comme son nom l'indique, de faire des Angel cake, gâteaux américains que l'on pourrait comparer à notre biscuit de Savoie, mais sans jaune. C'est à ce moment là que ma famille à décrocher dans mes explications, parce que l'Angel cake, et bien, en fait, j'aime pas trop ça. Le seul que j'ai goûté jusqu'à maintenant m'avait laissée bien perplexe quant à son intérêt gustatif. Alors, pourquoi rêver à un moule qui permet de faire ce que je n'aime justement pas? Même moi, j'ai parfois du mal à me comprendre... Le fait est que j'ai trouvé mon moule et que j'en suis super contente! Je suis alors bien évidemment partie faire un petit saut sur Pinterest, histoire de créer un tableau dédié. Là, j'ai craqué sur la photo d'un gâteau qui n'est pas un Angel cake, même s'il y ressemble fortement. Parfait pour inaugurer mon nouveau moule! Bon, j'ai quand même eu quelques sueurs en regardant le déroulé de la recette et ses proportions un peu spéciales. Mais, rien ne pouvait venir à bout de mon enthousiasme. Ce gâteau, j'y croyais! Le résultat est tout simplement une merveille de gâteau. Délicieusement parfumé par le citron et l'huile d'olive, il est surtout, léger comme une plume. J'adore! Gâteau léger comme une plume aux blancs d’œufs: 6 blancs d’œufs (180 g) 230 g de sucre 220 g d'eau (de source) 150 ml d'huile d'olive fruitée (Nicolas Alziari) 1 citron bio 380 g de farine 00 1 sachet de levure chimique 1 pincée de sel Préchauffer le four à 170°C, chaleur statique. Mélanger l'eau, l'huile, le jus et le zeste de citron. Mélanger la farine, la levure et le sel. Monter les blancs en neige. Quand ils commencent à être bien mousseux, ajouter le sucre progressivement, 1 cuillère à la fois, tout en continuant à fouetter. Ajouter le liquide progressivement, toujours en fouettant. Tamiser la farine sur le mélange. Mélanger sans trop insister, toujours aux fouets. Verser la pâte dans le moule graissé. Faire cuire pendant environ 45 minutes. Dés la sortie du four, retourner le gâteau sur une grille. Pour finir: ce gâteau semble assez connu en Italie sous le nom de gâteau humide aux blancs d'œufs. Vous pouvez le faire dans le moule de votre choix. Il faudra alors seulement adapter la durée de cuisson. Ne vous étonnez pas pour la quantité de liquide de la recette. Ça fonctionne! La recette précisait d'utiliser de la farine 00. C'est justement une farine que j'ai, car je m'en sers pour faire ma pâte à pizza. Vous pouvez utiliser une farine T45 ou 55 à la place. Je pense que le résultat sera similaire. A manger avec une bonne confiture. Vous allez adorer!
