A non-Egyptian friend asked me for the Egyptian Pudding, there are so many recipes, I made here the "Basic" recipe. You can add to this recipe your favourite flavour like cinnamon or mcetkh (مستكة), you can even do it using Rice flour or Semolina flour or Cocoa. Ingredients: (for 4 cups or bowls) 2 cups Milk 1 cup Whipping cream 3 Tables spoons Sugar 2-3 Teaspoons Starch(Corn flour) 1 Packet of Vanilla Preparation: In a pot mix all ingredients with an egg whisk till well blended. Put over medium heat while stirring (don´t stop stirring) till it reaches the boiling point & thickens. Pour in the cups or bowls & leave to cool then serve. I sprinkled some Cinnamon on top as I love its flavour. مهلبية علا المقاديير ====== 2 كوب حليب 1 كوب كريمة خفق 3 معالق كبار سكر 2 - 3 معالق كبار نشا 1 باكيت فانيليا الطريقة ===== فى اناء اخفقى كل المقادير مع بعض بمضرب سلك جيدا ضعى الاناء على نار متوسطة مع التقليب حتى يغلى المزيج ويغلظ قوامه صبيه فى الاطباق الكمية دى تعمل 4 واتركيه ليبرد , وبعد كده قدميه مع رشة قرفة صغيرة واستمتعى بالطعم اللذيذ

Though not difficult to make, this Knafeh does require some time to prepare, a lot of which is hands off. Once you have all components set and prepared, the baking process takes very little time. It is advised to space your work over several days, as not to stress yourself on the day of. You can make Big Batch Sugar Syrup months in advance or the regular one a couple of days ahead. The Farkeh too, can also be prepared in advance, toasted, sifted then stored in zipper lock bag, then frozen for months, and ready to go when needed. It's also a good idea to soak the cheese the night before. With everything all prepared, all that's left to do on the day of serving, is drain the cheese, grease the pan, press in the farkeh, top with cheese, then cook of the stove.
