October, pumpkins are in abundant harvest. While in Hokkaido, many Japanese were placing pumpkins outside their doors. You know how expensive Japanese pumpkins compared to the Malaysian ones right? I was like in awe looking at so many pumpkins. It was not expensive in Japan and I wanted to lug back one but our luggage were bursting so I had no chance. Was invited to a potluck brunch later on and since I have pumpkin puree that I had prepare for another dessert, I decided to revisit this recipe as I recalled it was good. I modified it a little and added some sesame to give more texture. So here is my Sesame Pumpkin Pancakes 芝麻南瓜餅. Let's hope the girls like them. Findings: This time round my pumpkin puree has more moisture than before so do start the water addition from 40g and work your way in. What you need: (yield 10 pcs) 90g pumpkin, skinned and dice 1 tsp oil 1 tbsp sugar 90g glutinuous rice 2 tbsp rice flour 56g water (adjust accordingly) Red bean paste (10g each) Method: Steam and mashed pumpkin while hot. Add oil and sugar. Mixed well. Add in rice flour and 45g of the glutinous rice flour in the pumpkin mashed and blended together. Add in the remaining glutinous rice flour and water and knead till it form a dough. Divide dough into 8 portions. Divide red bean paste into 8 portions. Wrap the pumpkin dough with the red bean paste and roll into a ball and then flatten. Heat up the frying pan. Add a little oil and pan fry the pancake till golden brown. Serve hot. The weather is crazily hot these day. Guess we are entering into one of our 3 season, the hottest. Will be nice to have something cold for dessert later. Today I tried another Jiu Fen Taro Ball 九份芋圆 (2) recipe and this time round, using a combination of tapioca flour and rice flour. Findings: The texture is softer and less chewy. For those who don't fancy too chewy texture, this will be a good recipe. As for this recipe, the "expansion" is not that great so actually I can afford to cut it bigger. My girl loves this and luckily I had prepared a big tub for her to dig in. What you need: 100g yam, skinned and cubed 10g rice flour 30g tapioca flour 2 tsp sugar 20 - 50g water (increase this slowly) 100g sweet potatoes, skinned and cubed 10g rice flour 30g tapioca flour 1 tsp sugar 20-50g water (increase this slowly) Method: Steam yam (sweet potatoes), add sugar and mashed it up. Mix in rice flour and tapioca flour. Add in water and knead to form a soft dough. Start with 20g and slowly increase the water until you achieve the soft consistency. Flatten into a rectangle and cut into strips and then to cubes. (Try to do small coz it will grow big after boiling). Enjoy!

This is another popular snack from Malaysia and Singapore. ‘Talam’ is a Malay word meaning ‘tray’, because the kuih is steamed in a tray-like steaming pan and it is made into two layers, one layer is sweet and the other is on the salty side. One can easily find these kuih (cake) sold at in the morning or night market. Instead the usual green and white one, I tried it with palm sugar. The top coconut milk layer is slightly salty and it compliment well with the sweet fragrant taste of the palm sugar from the bottom layer. Ingredients for the bottom layer: Recipe Adapted from: Jun of Yummylicious 200 gram palm sugar 2 1/2 cups water 1 cup flour 1 tbsp cornstarch 1/2 tsp alkaline water For the top layer: 1 1/2 cups thick coconut milk 1/2 cup rice flour Salt to taste 1. Greased an 8” x 8” square pan with some vegetable oil. Bring the water in the steamer to a rapid boil. 2. Combined all the above ingredients and mix well. Strain mixture into a saucepan and cook over low heat until slightly thickens. 3. Pour into the pan and steam it for 20 minutes. 4. In the meantime prepare the top layer. Combined all the ingredients and mix well. Strain mixture into a saucepan and cook over low heat until slightly thickens. 5. Pour the mixture on top of the bottom layer and steam it for another 30-40 minutes or until it is cook. You can test it by inserting a knife into the middle and it should come out clean. 6. Dan enak ternyata lho..tahu di bikin bakwan..makanya di posting aja dech. Aku pertama udah takut aja kalau bakwannya asem..karena pakai campuran tepung dan tahu kadang suka asem kalau beli di pasar. untuk menyiasatinya..aku rebus bentar tahunya di air garam..dan selalu berhasil sich..tahunya jadi nggak asem lagi dech. Enak di olah apa aja. Aku memang suka tahu tempe..tiap hari selalu ada aja..tahu atau tempe di dapur..kadang2 ya sekedar di buat sambal gitu..udah bisa buat lauk..nasi merah ku..hihi. Kali ini gorengan favorit suami..bakwan..tadi masih ada sisa tahu 3 biji..daripada lupa dan kebuang..udah..cemplungin aja ke adonan bakwan..jadi dech bakwan tahu..enak dan gurih lho..^^. Biasanya sich..khusus bikin bakwan tahu kayak perkedel gitu yang dari tahu aja..kali ini pakai sayuran lain dan terigu juga..jadi bener2 bakwan..cuma pake tahu gitu judulnya teman2..^^ Bakwan Tahu Bahan : 3 buah tahu, iris kotak2 kecil 1 buah wortel, potong korek api 2 batang daun bawang, iris halus 1 batang sledri, iris halus 150 gram terigu protein rendah 1 butir telur 1 sendok teh ebi sangrai halus ( optional..nggak pake juga enak2 aja ) Kaldu ayam bubuk 1 sendok teh dan garam secukupnya Gula Pasir 1/4 sendok teh ( biar rasa gurihnya muncul ) Air 100 ml Bumbu Halus : 2 siung bawang putih 1/4 sendok teh ketumbar Cara Membuat : Campur aduk semua bahan dan bumbu halus hingga rata. Goreng di minyak panas terendam sampai matang dan kecoklatan. Sajikan hangat dengan cabai rawit.
