Italian food rules are always a generalization but if you want to eat like a local, here are some of the Italian food rules to follow.:
Αρχικά θεώρησα αστεία την ιδέα να γράψω μια "συνταγή" για βραστά χόρτα.. Ομως τελικά πείστηκα ότι δεν είναι αυτονόητο ότι ξέρουν όλοι πως φτιάχνονται...ιδού λοιπόν και ας γελάσετε... Τα συγκεκριμμένα λέγονται "γούλες" και ήρθαν από την Κρήτη - είναι αγκαθωτά και έχουν μια ιδιαίτερη γεύση...εννοείται ότι μπορείτε να χρησιμοποιήσετε ό,τι είδους χόρτα σας αρέσουν καλύτερα...ραδίκια, διάφορα χόρτα του βουνού, ιταλικά... Κατ' αρχήν πρέπει να τα καθαρίσουμε πολύ καλά από ξερά ή κίτρινα φυλλαράκια ή σκουπιδάκια. Επίσης κόβουμε και πετάμε το κοτσανάκι τους κάτω-κάτω αν είναι σκληρό. Μετά τα πλένουμε αρκετά χέρια μέχρι το νερό να βγαίνει καθαρό. Τα αφήνουμε στην άκρη να στραγγίξουν. Γεμίζουμε μιά μεγάλη κατσαρόλα νερό μέχρι τη μέση και το βάζουμε να βράσει. Δεν αλατίζουμε το νερό γιατί κιτρινίζουν τα χόρτα. Μόλις πάρει βράση ρίχνουμε τα χόρτα, τα πιέζουμε ελαφρά με ξύλινη κουτάλα, σκεπάζουμε την κατσαρόλα και τα αφήνουμε σε δυνατή φωτιά για 15 λεπτά περίπου, ανακατεύοντας κανα-δυό φορές. Τα χόρτα πρέπει να κρατάνε λίγο, να μην τα αφήσουμε να λιώσουν. Τα ρίχνουμε σε σουρωτήρι και τα αφήνουμε να στραγγίξουν καλά. Σερβίρουμε με λίγο αλάτι, λίγο λάδι και μπόλικο λεμονάκι. Μια συμβουλή: κρατήστε λίγο από το ζουμί που έβρασαν τα χόρτα και πιείτε το ζεστό με ελάχιστο αλάτι και μπόλικο λεμόνι...Θαύμα... Στην Κρήτη τα περισσότερα χόρτα τα τρώνε με ξύδι...δοκιμάστε το...
