Préparation : 15 min Cuisson : 15 min Pour 4 personnes : -4 douzaines d’escargots en conserve -1 grosse échalote -1 gousse d’ail -200 g de champignons de saison (Paris, cèpes, bolets…) -40 cl de Chablis + 2 cuillères à soupe -40 cl de fond de veau -15 cl de crème fraîche -Huile d’olive -Persil -Cerfeuil -Sel, poivre Égouttez les escargots, déposez-les dans un bol et arrosez-les de 2 cuillères à soupe de Chablis. Réservez. Nettoyez les champignons et coupez-les en 2. Pelez et émincez finement l’échalote ainsi que l’ail. Faites suer l’échalote dans 2 cuillères à soupe d’huile d’olive, ajoutez les escargots et les champignons, mélangez. Ajoutez le vin blanc, le fond de veau, 1 cuillère à soupe de persil finement ciselé et l’ail, laissez sur feu doux 8 à 10 min. Versez la crème, laissez encore mijoter 4 à 5 min, salez et poivrez. Répartissez la préparation dans des petits poêlons individuels et servez avec un brin de cerfeuil.
