ayant un petit stock de farine de riz gluant, mais n'ayant aucune envie de réitérer mon expérience des boules d'or... je me suis décider à essayer de l'utiliser dans d'autres recettes, et donc cette fois ci: des crèpes... elles sont bien sures différentes...
Ces petites boules faciles et rapides ont une belle texture moelleuse et une saveur distincte de noix de coco.
Lors de nos papotes autour de la brioche de printemps, Carole, Anne et moi avions épinglé cette recette de pain brioché dont la promesse est une mie ultra filante. En note sur un coin de carnet depuis plus d'un an, le congé de Pâques gris et froid était l'occasion idéale pour se lancer. Ingrédients respectés, pâte collante pétrie longuement, joli développé, odeur délicieuse à la cuisson, vient la dégustation . . . et la mie ne file pas !! Petite déception, joli morceau en bouche, whaouu, elle ne file pas, et alors ? Elle est douce, blanche, légère et d'un moelleux incroyable ! . . . Oui mais quand même, pourquoi elle ne file pas cette mie ? Farine, temps de pose (je n'ai pas fait la dernière longue levée au réfrigérateur), façonnage, qui sait, il faudra recommencer pour trouver le pourquoi, en attendant recette validée telle quelle, qu'est ce qu'il est bon ce pain brioché ! Pain brioché à la farine de riz gluant (moule de 25cm) 100gr de farine de riz gluant (épicerie asiatique) - 210gr d'eau - 325gr de farine de blé - 2 blancs d'oeufs - 60gr de sucre - 1+½ càc de levure boulangère déshydratée - 1 càc de sel - 20gr de beurre à température ambiante Mettre la farine de riz et l'eau dans un poêlon, faire chauffer à feu doux en mélangeant sans cesse jusqu'à ce que la pâte se ramasse en une pâte épaisse et lisse. Laisser revenir à température ambiante en remuant de temps en temps. Dans le bol du robot, muni du crochet à pétrir, mettre la farine, les blancs d'oeufs, le sucre, la levure et la pâte à la farine de riz refroidie, pétrir à petite vitesse, dès que la pâte forme une boule ajouter le sel, pétrir à vitesse moyenne pendant 5 minutes, ajouter le beurre, continuer à pétrir à vitesse moyenne pendant 10 minutes, la pâte colle aux parois, décoller en raclant les bords avec une spatule, ramener vers le centre, pétrir de nouveau 10 minutes à vitesse moyenne. Après le temps de pétrissage la pâte sera collante mais souple, lisse et brillante. Fermer le bol avec le couvercle (j'utilise le bol en verre du Kitchenaid, si ton bol n'a pas de couvercle le couvrir d'un film), laisser pousser deux heures à température ambiante (la pâte doit doubler de volume). Dégazer, couvrir de nouveau et laisser reposer une nuit au réfrigérateur. Beurrer le moule à cake. Verser la pâte sur le plan de travail fariné, la diviser en trois et former de longs boudins puis les tresser, placer la tresse dans le moule, couvrir d'un linge propre et laisser pousser deux heures à température ambiante, il double de volume (dans la recette originale la seconde pousse se fait sur 12 à 18 heures au réfrigérateur). Préchauffer le four à 180° Mettre une feuille de papier sulfurisé sur le dessus du moule (pour éviter que le pain ne colore trop vite), enfourner pour 25 minutes, retirer le papier et laisser cuire encore 20 minutes. À la sortie du four laisser tiédir 10 minutes avant de démouler et refroidir sur une grille. Comme d'habitude, après notre goûter le reste du pain a été coupé en tranches épaisses (± 2cm) puis congelé. Grillé (sans décongeler) il est parfait au petit déjeuner, recouvert de confiture de rhubarbe maison (mon péché mignon), on aime sa saveur délicatement sucrée et sa mie tendre.

Je vous les avais promises, voici les perles coco sésame et cacahuètes. Après les perles coco à la crème d’œuf (recette ICI), cette variante est plus simple par ses ingrédients, plus faciles à trouver (il y aura toujours la farine de riz gluant !). Elle est en plus totalement et naturellement sans gluten, donc une bonne option pour ceux qui ont une intolérance.

Ce sont de petites boules à la farine de riz gluant, très similaires aux « maqius », mais cuites à la vapeur. Le résultat est simple et délicieux. Je trouve en plus sincèrement amusant de les préparer et elles peuvent compléter à merveille un repas de « dim sum ». Ne vous arrêtez pas au terme de riz gluant qui pourrait vous rebuter, car je peux vous dire que ces petites douceurs sont vraiment délicieuses, et très faciles à réaliser. Ces gâteaux, qui se dégustent tièdes, sont croustillants à l’extérieur, avec ce côté addictif du sésame grillé, et moelleux et doux à l’intérieur. Sous cette forme, ils sont une version des « jian dui », boules de riz gluant enrobées de sésame et frites, version que j’ai trouvé sur le site de Maggie, d' »Omnivore’s cookbook ». La farine de riz gluant est facile à travailler, et ne nécessite pas de temps de repos comme la farine de blé. Elle est sans gluten et a une saveur douce. Vous pouvez acheter la pâte de haricots rouges toute prête dans les épiceries asiatiques, ou la faire vous-même, vous trouverez la recette sur le blog.Vous pouvez aussi la garnir d’autres préparations. Gâteau de riz gluant à la pâte de haricots rouges Préparation: 15 min Cuisson: 6 min Ingrédients/ 6 gâteaux 120 g de farine de riz gluant 100 g d’eau (+/_) chaude 200 g de pâte de haricot rouge azukis Graines de sésame 1/2 c à s d’huile végétale Versez la farine de riz gluant dans un saladier, ajoutez l’eau en 3 à 4 fois pour ajuster la quantité. Remuez à la baguette puis à la main jusqu’à ce que la farine soit incorporée et forme une boule molle mais non collante. Ajoutez un peu de farine ou d’eau si nécessaire. Travaillez la pâte 2 à 3 min qui doit être souple. Formez un boudin avec la pâte et divisez-la en 6 parts égales. Formez une boule avec chaque morceau. Aplatissez une boule de pâte avec la pomme de la main, sur 0,8 cm d’épaisseur environ; disposez en son centre une petite boule de pâte de haricots (30-35 g) et remontez délicatement les bords pour cacher la farce. Roulez la boule ainsi formée dans les mains pour lui donner une forme bien arrondie. Aplatissez délicatement la boule avec la paume de la main sur 1-1,2 cm environ. Versez les graines de sésame dans une assiette plate, mettez-y la galette et appuyez légèrement dessus pour que les graines s’impriment dans la pâte, retournez le gâteau et faites de même sur l’autre face. Faites chauffer l’huile dans une poêle antiadhésive à feu moyen. Une fois chaude, disposez les gâteaux, sans qu’ils se touchent, et faites-les cuire 2 à 3 min de chaque face (procédez en 2 fournées si besoin). Les gâteaux doivent être légèrement dorés.
