So lately I have been going through a total cookies baking phase. Actually to tell you the truth, if there is one thing I'm not so great at...
Ich habe normalerweise, ach quatsch, eigentlich immer, mehrere Sorten Kekse im Haus. Habe ich irgendwo schon mal erwähnt. Schlummern schön gemütlich in ihren Keksdosen, bis sie irgendwann im Laufe des Tages einen kleinen Lichtstrahl sehen. Aber nur von der Kellerlampe. Danach wird die Dose wieder dichtgemacht. Ach ja, und die Keks-Truppe ist danach auch etwas kleiner.... ;) Eine Sorte habe ich wirklich IMMER im Haus. "Digestive Cookies" heißen sie, und stammen ursprünglich aus dem United Kingdom, sind aber jetzt auch bei uns populär. Es sind welche von meinen Lieblingskeksen, weil sie einfach so schnell gebacken sind, und das Ausrollen und Ausstechen kann man sich auch sparen, ich forme den Teig einfach immer zu einer Rolle, stelle ihn über Nacht in den Kühlschrank, und schneide dann am nächsten Tag mit einem sehr scharfen Messer Scheiben ab. Ich habe gelesen, dass das "digestive" im Namen ist, weil in Ihnen Natron, also das Backtriebmittel, was in den USA/England oft anstelle von oder in Verbindung mit Backpulver verwendet wird, ist, und ihnen magensäureneutralisierende (gibt's das Wort?) Eigenschaften zugeschrieben wurden. Naja, ob das stimmt, bei der geringen Menge, glaube ich zwar nicht, aber da sie 100% Vollkorn sind, denke ich zumindest nicht, dass sie von den Nährwerten her (alle die jetzt denken "und was ist mit der Butter und dem Zucker?!" -> psssst...das sind ja immer noch KEKSE) schlecht sein sollten. Rezepte gibt es glaube ich unendlich viele, mal wird Dinkel, mal Hafer, mal Weizen genommen. Nur Vollkorn, oder weißes Mehl und Vollkornmehl gemischt... Ich habe rumprobiert, und dies ist mein mittlerweile liebstes, ich benutze dunklen Muscovadozucker. Aber auch mit Rohrzucker oder Vollrohrzucker (z.B von alnatura) schmecken sie super, ich finde sie auch irgendwie jedes Mal anders, je nachdem, wie dick ich sie schneide, oder wie lange ich sie backen lasse. Klasse machen sie sich auch in Joghurt mit Früchten, dann kleinbröseln und als "Müsli" verwenden. Zutaten für 15 Stück (oder ein Backblech) 120g Dinkelvollkornmehl 110g Haferflocken 1 Tl. Backpulver 1 Prise Salz 60g dunkler Muscovadozucker 110g Butter, kalt 3 bis 4 EL Milch Und los geht's Die Haferflocken und den Zucker in einem Zerkleinerer feinmahlen. Mit dem Dinkelmehl, Salz und Backpulver mischen. Butter würfeln, zum Mehlgemisch geben, und mit 3-4 EL Milch rasch zu einem glatten Teig verkneten. Zu einer Rolle von 5 cm Durchmesser formen, und mindestens 2 Stunden oder über Nacht kühl stellen. Den Backofen auf 180°C vorheizen, ein Blech mit Backpapier auslegen. Mit einem scharfen Messer von der Rolle Stücke mit ½ cm Dicke abschneiden, auf das Blech legen. Im vorgeheizten Ofen 15-20 Minuten backen, auf einem Backgitter vollständig auskühlen lassen. Sehr ihr, die sind echt fix gezaubert, sodass ich wirklich gar nicht drumherum komme, die nicht immer zuhause zu haben. Habt es schön! Eure Lena

In response to the interest on Facebook, here is my recipe for the Digestive biscuits. 80g Fine Oatmeal 100g Wholemeal flour 50g Dark Brown sugar Pinch of salt 110g unsalted Butter at room temperature 100g recently refreshed starter at 100% hydration Put the oatmeal in a food processor and add the flour, sugar and salt, pulse a few times to combine. Add the butter in the processor and mix until it looks damp and comes together in a rough dough. If you don’t have a processor combine the other dry ingredients in a bowl before rubbing in the butter with your fingertips. Remove mix from food processor to a bowl and stir in the starter until well combined. Cover and refrigerate until firm, about an hour. Roll the dough out evenly on a lightly floured surface until it is approx. 3-4mm thick. Cut circles of dough with a cutter and place on parchment/silicone paper lined trays. They don’t spread much but leave a little room between them. I make around 22 from this recipe. Prick all over with a fork and put them back in the fridge for 15 – 20 minutes. Bake them at 180ºC for 15-20 minutes turning the tray once during baking, check them at the 10 minute mark, you are looking for them to seem dry and firm and browned slightly at the edges and underneath. They are slightly soft when they first come out of the oven and firm up when cooled. Transfer to racks to cool down and then keep in an airtight jar or container.
