I often make her clafoutis recipe because it’s so simple and makes for an excellent dessert for summer entertaining. This is the perfect spring-summer treat. It's a dessert, but also a coffee cake which makes it totally acceptable to be eaten for breakfast also. Hmm, cu ce incepem? Cu caramelul as zice eu. Punem intr-o tigaie teflonata (un wok ar fi ideal, dar merge si una normala) zaharul si cele 4 linguri de apa, lasam la foc mediu pana incepe sa fiarba si amestecam de cateva ori cu lingura de lemn., Cand incepe sa fiarba dam focul o idee mai mare, punem lingura de lemn deoparte pentru ca in faza aceasta nu mai avem nevoie de ea, si-l lasam pe foc pana cand vedem ca-si schimba culoarea. Cand devine auriu-aramiu (dar nu foarte) il luam de pe foc si adaugam sarea, apoi smantana si amestecam energic ca sa nu se intareasca caramelul. Untul il taiem cubulete si-l punem in caramel, iar la final adaugam si alunele sarate si alunele de padure putin maruntite - dar putin de tot. Lasam deoparte caramelul la racorit. Trecem repede la crusta. Punem biscuitii in robot si-i macinam fin. Rasturnam biscuitii maruntiti intr-un bol mai mare, adaugam zaharul, cacaoa si lingurita de scortisoara si amestecam cu o lingura pentru o distribuire uniforma a ingredientelor. Untul topit il adaugam peste biscuiti si omogenizam. Tapetam fundul unei tavi detasabile - 21cm diametru - cu hartie de copt. Punem compozitia de biscutii, o distribuim uniform pe fundul tavii si pe pereti pana sus. Presam bine biscuitii cu fundul unui pahar, apoi o dam la rece pentru 10 minute (eu am pus direct in congelator pentru o racire mai rapida si mai intensa). Dupa 10 minute scoatem tava din congelator si turnam caramelul peste stratul de biscuiti. Dam din nou la rece, la frigider. Pregatim primul start de ciocolata. Rupem ciocolata bucatele, adaugam lingura de ulei si de lapte, si le topim la bain-marie sau la microunde. Eu am ales varianta mai usoara, microundele. Turnam ciocolata peste caramel si introducem din nou tava la frigider. Pentru crema de branza, incepem cu ciocolata alba, care am o topim la bain-marie de data aceasta, fiind mai sensibila si sa nu riscam sa o ardem/prajim. Lasam ciocolata topita deoparte si punem gelatina la hidratat in cateva linguri de apa rece, 4-5 sa fi fost la numar. Mixam branza cu smantana in blender pana devin o pasta fina. In loc de branza si smantana puteti folosi si crema de branza gata cumparata din magazin, dar eu am vrut sa fie mai 'bio' si am folosit produse luate din piata, dar sa stiti ca am obtinut o minunata crema de branza, fina si pufoasa (in final). Scoatem crema de branza din blender sau din cutie si trecem la mixer. Adaugam treptat ciocolata topita. Dam mixerul la viteza mai mica si incorporam si gelatina hidratata. Smantana pentru frisca o mixam cu o lingurita de zahar vanilat, apoi o incorporam cu miscari de sus in jos in crema de branza. Turnam crema de branza peste glazura de ciocolata si dam tortul la congelator de aceasta data. Preparam glazura 2 identic cu prima glazura, eu tot la microunde ca sa respect partea cu identic, si o lasam la racorit 15-20 minute. Cand crema de branza este suficient de intarita, turnam glazura de ciocolata, nivelam frumos si din nou introducem tortul la frigider. Cred ca v-ati dat seama cat de esentiale sunt frigiderul si congelatorul pentru prepararea acestui tort, la final o sa ajungem sa le multumim lor pentru reusita :P Ce a mai ramas de facut? De cumparata o cutie mica de bomboane tofifee :))), in caz ca n-ati primit-o cadou de la cineva :P si....de mixat bat smantana pentru frisca cu putin zahar vanilat. Cand e intarita bine glazura de ciocolata ornam cu moate de frisca, iar in varful fiecarui mot punem cate o bomboana toffifee, iar efectul vizual va fi maxim!! Cred ca v-am ametit cu procesul de preparare...dar repet nu e complicat, mai anevoioasa e partea cu scosul de la/bagatul la rece. Atata tot!! Enjoy! Sursa: Taste.com.au
