Cardoon looks like and is related to artichokes but the buds are not eaten. Instead they are grown for their stems which look like celery but taste like artichokes.
Cardoon is a unique delicacy, especially in traditional Italian and French cuisine! This cousin of the artichoke is native to the Mediterranean and grows eye-catching 4" buds with 2" violet-purple flowers on elegant 3" to 4-1/2" tall stalks. The unique artichoke-and-celery-like flavor of Cardoon is delicious breaded, fried, raw, pickled, sauteed in pastas, braised in gratins, or in mixed in soups and stews. Once popular in Greek, Roman, and Persian cuisine, Cardoon has since spread in popularity across Europe and America today. This perennial plant is resilient and adaptable to many climates and soil conditions. Embrace the culinary and aesthetic allure of Cardoon by growing this unique plant in your very own garden! Also Known As: Artichoke Thistle, Wild Artichoke, Thistle Cardoon, Cardone, Cardi, Cardoni, Cardon, Cardo, Globe Artichoke Thistle, Artichaut Sauvage, Gros Chardon, Grosella de Cardo, Desert Artichoke, European Cardoon, Globe Artichoke, Scotch Thistle. Seeds are still viable beyond pack date. Store in a cool and dry location such as the refrigerator or basement to best preserve germination rates. Planting Instructions: Soil Preparation: Remove weeds, large rocks, and litter from the planting area. Till the soil 8-10 inches deep and rake several times to break up large clods. It is best to do this when the soil is dry enough to not stick to garden tools. Loosening the soil will help the plant establish strong roots. Planting: Start seeds indoors in small containers 8-12 weeks before last frost, keeping the soil temperature at 65F. Harden off, then transplant seedlings after last average frost in Spring. Direct sowing outdoors and Fall planting is possible for warmer climates. Planting Depth: 1/4 inch Within-Row Spacing: 4 feet Between-Row Spacing: 6 feet Care During the Season: Watering: Water plants moderately. If the soil moisture is low, water but avoid waterlogging soil. Weeding: Keep plants free of weeds, which rob weak root systems of nutrients and moisture. Insecticides: Insecticides may be used to protect plants. Bt-based insecticides and sulfur are organic options that can be used for prevention. Sevin is a synthetic option. Sulfur also has fungicidal properties and helps in controlling many diseases. Before using a pesticide, please read the label and always follow cautions, warnings and directions. Diseases: Disease can happen in cloudy, damp weather. Check plants daily and treat with an approved fungicide if diseases do appear. Neem oil, sulfur, and other fungicides are available for use. Please always follow label directions. Harvesting: Harvest cardoon by cutting the plant at the base, below the crown. Remove the excess loose leaves and pull away at the outer layers of stalks to reveal the core stalks. Optionally, blanch the cardoon by tying the cardoon core stalks at the top then wrapping in thick fabric or plastic for 4-5 weeks. This optional process is said to whiten the colors of the stalks and reduce bitterness. The Cardoon is part of the artichoke family and this handmade linoprint shows the plant about to burst into flower. Made using the reduction linocut method, whereby the lino plate is cut away as each layer of colour is added, this print is one of a limited edition of just 8, making this a rare and unusual gift for the nature lover in your life. It is on A4-size paper, meaning it will fit into standard size frames, and is sent to you unframed, wrapped in tissue paper and in a protective cardboard envelope. Please note that due to the handmade nature of this item, there may be slight colour differences between each print in the edition, and the one pictured here - all part of the unique charm of printmaking. Thanks for looking at my work.
All from seed this spring. The Red Hot Poker behind was also from seed, but from last spring and moved to this new bed. Our "marine layer" 60 degree mornings aren't boding well for my pumpkin if it's already 1/4 of the way through August...

Cynara cardunculus HEIRLOOM. This unusual vegetable is a Mediterranean delicacy! It's closely related to the artichoke, but is grown for its thick, edible leaf stalks, which have a distinctive flavor and can be eaten in soups or sauted. It is perennial in zones 7-10, though it does best in areas with long, mild summers, as high heat will cause it to develop bitter flavors. Stalks will require blanching (wrapping in fabric or paper to keep light off of them) for the last four weeks before harvest, to develop the creamy color and delicate texture this vegetable is known for. Cardoon should be sowed indoors 8 weeks before its outdoor transplant date, which is ideally 2 weeks after your last frost date. Plant in full sun in rich, well drained soil. Plants grow large, so allow them a good four feet between plants! Stalks will be ready to harvest in 115 days. 1 gram packet contains approximately 20 seeds.

The Cardoon, scientifically known as Cynara cardunculus, is a striking perennial plant that enriches gardens with its silver-green, deeply serrated foliage reminiscent of artichoke leaves. This Mediterranean native is not only valued for its ornamental beauty but also for its culinary history. Its purple thistle-like flowers are a magnet for pollinators, enhancing garden biodiversity. This resilient and hardy plant, with its sturdy root system, establishes well in varied weather conditions, making it suitable for gardeners at all experience levels. The Cardoon is renowned for its architectural beauty, with its enchanting purple-blue flowers and shimmering silvery leaves, reaching notable heights. Occasionally, it may produce delicate white blooms, but its silvery foliage remains the showstopper. As acclaimed horticulturist Graham Stuart Thomas noted, the Cardoon is a standout among silver-leafed plants. However, it requires careful management due to its vigorous growth. Ideal for spring planting in warm, sunny, and sheltered locations, it needs ample space to reach its full size of up to 5 feet tall and 2 feet in width.
