Voeg het gehakt, de wortels, de champignons en de selderij bij elkaar en blus met de witte en de rode wijn. Laat de saus tot de helft inkoken. Pel de look en snijd hem fijn. Voeg de tomatenpuree, de tomaten en de look toe. Bind de oregano, de tijm en de laurier samen en leg het bundeltje in de saus. Laat nog even sudderen. Kruid naar smaak met piment d'espelette en ras-el-hanout. Maak nu de croque. Verwarm de ovengrill voor. Bestrijk het brood met olijfolie. Leg de kaas en de ham op het brood en dek af met de andere helft. Leg het brood in het croque-apparaat. Haal het brood eruit en giet de bolognaisesaus over de croque.
