Method • Whisk 2 egg whites + 1/4tsp vinegar until stiff peaks. In another bowl mix 2 yolks, 2-4tbs sweetener, 20ml almond milk & 1/2tsp vanilla. • Add some of the whipped egg whites to the yolk mixture, gently stir through before adding it back into the egg whites. • Sift in 30g self raising flour, fold gently keeping as much air in the mixture as possible. Transfer to a piping bag. • Pipe mixture onto a nonstick pan (medium low heat) cover for 1-2 mins. • Add some batter on top before flipping, cover & cook again for 1-2 mins (You can leave the vinegar out or replace it with lemon juice) Credits: @bakeswith_a
