Voici donc sans attendre plus, la recette des fameux « Maamouls » … Bon déjà, le « maamoul » s’koi ? Et bien le « maamoul » c’est le sablé moyen-oriental. On trouve dans la fabrication de sa pâte de la farine, bien sur, mais également de la semoule, ce qui donne une petite touche croquante, mais discrète, raffinée … Le maamoul peut être fourré aux dattes ou à la pâte d’amande. La réalisation est assez simple. Reste le moule, qu’on ne trouve pas partout. Mais à défaut, on peut façonner en petits dômes (comme des congolais) ou en petites galettes. Ingrédients (pour une vingtaine) : – 500g de semoule fine ou moyenne (je préfère moyenne pour plus de texture), – 100 g de farine, – 100 g de sucre en poudre, – 200 g de beurre très mou, – 1/2 sachet de levure chimique, – 4 càs d’eau de fleur d’oranger, – environ 1/2 verre d’eau, – 150 g de pâte de dattes, – du sucre glace.
