Last month V bought a whole Jackfruit from Farm Fresh Market Store, yes., the whole fruit. We get Jackfruit here during season time but not as a whole fruit, they cut the whole fruit into 6 or 8 pieces and wrapped individually for sale. But this year, luckily got the whole Jackfruit here and that too the fruit was fully ripen with nice pretty golden color, tasted so so sweet and delicious. Even the honey dipped jackfruit will not taste that much sweet. We enjoyed the fruit to the core. First, I thought will make Kerala style Payasam and Halwa using that Jackfruit but you know the sweetness and the color of the fruit was so tempting and ended up eating them as such. I only tried this yummy and filling smoothie using Jackfruit and Banana Combo. So before the jackfruit season ends, try this tropical fruit smoothie and enjoy. Coconut Water gives nice sweetness and taste to smoothies and now-a-days I prefer non-dairy smoothies more. Chia seeds are rich in fiber and protein and it is good to have in your diet regularly. I am taking chia seeds 3-4 days a week in my smoothies or in salad. Smoothies prepared using chia seeds are very filling and controls hunger for long time. JackFruit Chia Smoothie Recipe Prep Time : 10-15 minutes | Cook Time : nil Recipe Category : Smoothie/Cold Beverage Serves 1 generously Ingredients Ripe Jackfruit 6 or 7 no.(remove seeds and roughly chopped) Banana 1 small or 1/2 Chia Seed 2 tsp(soaked in 1/4 cup water or tender coconut water) Tender Coconut Water 1/2 - 3/4 cup(or adjust to desired consistency) Sugar or honey to taste Ice cubes few,optional Method I prefer to use soaked chia seeds in smoothies but you can skip soaking the seeds. Blend all the ingredients together till smooth and frothy. Pour into serving glass and enjoy ! Notes: Soaking chia seeds in fresh tender coconut water is optional but it sure gives nice taste and flavor. If you don't get chia seeds, skip it. To the above recipe, you can also add 1/2 of a ripe mango too. I used fresh tender coconut water(Ilaneer).
