Today I am a little homesick and longing for some of Ulsters finest treats. I could just murder all or some of the following: 1. Toasted veda with cheese 2. Iced diamonds 3. Paris buns 4. Snowballs To top it all off I would then wash them down with a nice bottle of club orange! YUMMY! But alas I live in North Yorkshire and none of these fine Ulster foods are available here so to curb my craving for a taste of home I'm turning to baking myself a treat. I decided that good old wheaten bread would be a wise choice as I just love it smothered with butter and jam but alas I don't have enough buttermilk or any natural yoghurt to make my own so instead I decided to go with flakemeal biscuits. To be honest flakemeal biscuits aren't the most exciting Ulster treat compared to veda or iced diamonds but every time I take a trip home I make sure I buy a packet- usually the chocolate topped ones. I've even introduced Joel to them and he too likes a nibble. Just a wee mess! Confident I had all the ingredients for flakemeal biscuits and with my Kenwood at the ready I set out to create for myself a little taste of home. Ingredients 120g margarine, softened 60g sugar 150g porridge oats 60g plain flour Pinch of baking soda Pinch of salt Directions Cream the margarine and the sugar together until light and fluffy. Add the dry ingredients and mix until well combined. Once mixed pour the dough out onto a well floured surface. Using a rolling pin roll the mixture out so it's about 2cm thick. Then, using a round pastry cutter cut out your flakemeal biscuits. Place onto a non stick baking sheet and bake at 170C for about 25 minutes. you'll know they're ready when they're a light golden brown and still a wee bit soft. Once removed from the oven sprinkle the top with some caster sugar. Leave to cool and then enjoy! These are really easy to make and I like to think not that fattening so if you really wanted you could dip the top of them in chocolate but I kinda like them just with the sugar. They have definitely satisfied my need for something from home. A taste of home
