I employ a favorite time-saving grocery store trick in this recipe, to help get this beautiful, flavorful soup on the table faster. Most grocery stores offer pre-made popcorn chicken or chicken tenders that are of good quality, and by tossing them with a simple honey/soy mixture, we can infuse them with flavor and crisp them up in the oven, before topping our bowls of steaming Khao Soi Gai (Thai Coconut Curry Noodle Soup with Chicken). This is optional, and you can follow my NOTE below for a fresh-cooked chicken breast option or leave the meat out entirely.

Recipe video above. Vietnamese caramel sauce is a popular sweet/savoury used in Vietnamese dishes. Here, it's used for bite size chicken pieces that get coated in the glaze with a generous dose of ginger. It's quick, easy, something different and outrageously good!** NOTE: Sadly seeing reader feedback that the liquid isn't reducing and chicken isn't caramelising. Please ensure to use a LARGE PAN and be brave, simmer RAPIDLY! Else the liquid will take ages to reduce. See Note 4.**

Recipe video above. Pad See Ew (which means Stir Fried Soy Sauce noodles) is one of the most popular Thai street foods. Traditionally made with Sen Yai which are wide, thin rice noodles which are not that easy to come by. So use dried rice noodles instead - I've eaten enough Pad See Ew at Thai restaurants to assure you that there is no compromise on flavour!KEY TIP FOR SUCCESS: Cook the chicken separately from the noodles. Home stoves are no match for the fierce heat of restaurant and street vendor burners. You have to cook separately to get caramelisation on the noodles which is key for authentic flavour. If you don't, the noodles will just stew and your dish will lack flavour!
Cool, refreshing, and deliciously light, the litchi rose panna cotta has some amazing textural play going on. The base, which is somewhat similar to custard, is velvety cream. The bits of sweet litchi bring in a lovely mouthfeel, and the whiff of rose adds deeper dimensions.
