El té de puerto es una pequeña planta silvestre leñosa que crece a unos 1200 metros entre las rocas de los pastizales de alta montaña, principalmente en la comarca de Liébana. Aunque se le llama "té", en realidad no lo es, de hecho ni siquiera tiene teína. Como podéis ver en las imágenes se trata de unas pequeñas flores amarillo verdosas con forma de espiga. La tradición en Liébana es hacer con ella infusiones con la que finalizar comidas copiosas como suele ser el cocido lebániego o el cocido montañes. Además se le suele agregar un chorrito de orujo, lo que lo hace aún más digestivo si cabe. Ahora seguramente os preguntaréis dónde se consigue esta planta... Pues la verdad es que no sé si fuera de Cantabria se podrá conseguir. Yo la encontré de casualidad en una visita que hice a una bodega, "Picos de Cabariezo", de hecho no sabia ni que existía. Allí en la visita nos explicaron que con ella hacían el licor de hierbas. De paso también me llevé su licor de hierbas, ganador del Premio Alquitara de Oro al mejor Orujo del año, tanto en 2012 como en 2013. En cuanto ví el té y el licor supe perfectamente lo que iba a hacer con ellos. Mi mente ya empezó a maquinar una receta y la verdad es que después del miedo inicial por si el invento salía mal, al final todo ha salido muy bien y estoy super orgullosa con el resultado. Es absolutamente perfecto, de sabor, de textura, de jugosidad, de olor... Hasta ahora este bundt es el mejor que he hecho y he probado. Sé que está feo que yo misma me esté tirando flores, pero no os miento... ES DELICIOSO!!! Para esta receta he usado el modelo Kugelhopf de Nordic Ware al que le tengo un cariño especial, no sé si es porque fue el primer molde bundt que tuve o porque realmente su forma me encanta (que también), pero el caso es, que teniendo otros, incluso sin estrenar, siempre vuelvo a él... {Con esta receta participo en "Tu mejor receta de dulce" que organiza Claudia & Julia junto con la revista Top Chef y Nordic Ware Spain} Ingredientes para un bundt cake de 10 cups {Receta Merceditas Bakery} Ralladura de 2 limones 2+1 cucharadas de zumo de limón (*) 1 cucharada y media de licor de hierbas (Orujo del Liébana) 375gr. de harina de trigo 4gr. de bicarbonato de sodio 4gr. de levadura en polvo 225gr. de mantequilla a temperatura ambiente 300gr. de azúcar 3 huevos L 250ml. de leche 1 cucharadita de pasta de vainilla Un puñado de té del puerto Preparación * Lo primero que haremos el día anterior, será infusionar la leche con el té del puerto. Para ello, en un cazo pondremos unos 300ml. de leche (sólo necesitamos 250ml.) junto con un puñado de té del puerto. Dejamos que hierva tapado a fuego suave. Retiramos del fuego hasta que enfríe. Por ultimo dejaremos reposar toda la noche en nevera hasta el día siguiente. Una vez pasado este tiempo, colar 250ml de leche infusionada en un vaso y añadir 1 cucharada de zumo de limón, remover y dejar reposar 30 minutos. Con este paso, lo que vamos a conseguir es un buttermilk casero con leche infusionada de té del puerto. 1. Precalentar el horno a 170º calor arriba y abajo. Engrasar un bundt cake con mantequilla. Reservar. 2. En un bol, tamizar la harina, levadura, bicarbonato. Reservar. 3. En un bol pequeño agregar la ralladura de los dos limones, 2 cucharas de zumo de limón y la cucharada y media de licor de hierbas. Remover y reservar. 4. En un bol grande batir la mantequilla junto con el azúcar hasta obtener una mezcla clara y blanquecina. Añadir la pasta de vainilla y los huevos uno a uno, no añadir el siguiente hasta que el anterior esté perfectamente integrado. 5. Incorporar 1/3 de la harina y batir a velocidad baja alternando con la mitad de la leche. Continuar alternando leche y harina a mínima potencia y terminar con la harina. 6. Volcar la masa en el molde bundt. Dar unos golpes al molde para que se acomode bien la masa y para que salga el aire que haya podido quedar dentro. 7. Hornear durante 1h y 15 minutos en la parte media del horno. Una vez pasado este tiempo asegurarse que está bien horneado pinchando el bundt con una brocheta, si esta sale limpia estará perfecto. Retirar del horno y dejar enfriar durante 10 minutos en una rejilla. Pasado este tiempo desmoldar y dejar enfriar por completo sobre una rejilla. 8. Para realizar el glaseado de licor de hierbas: Emulsionar azúcar glas, licor de hierbas y agua hasta obtener la consistencia deseada. Si está muy liquido, añadir más azúcar y si por lo contrario está muy espeso añadir más licor o agua según lo fuerte que cada uno lo quiera. Un saludo ♥
