I have so many things to do lately ^^ (actually I want to do a lot of things all the time, haha), as the end of the year mean a lot of parties and food. I have a plan that I will make fruit cake this month but I forgot to marinated the dried fruit, and I have no time left -*-. Anyway I still want to eat fruit cake, and the only way is making quick fruit cake. The one that doesn't need anything more than dried fruits, and liquor! This cake is not a traditional fruit cake, it's rum cake with dried fruit, hehe. With a lot of rum, this cake is the best for people who love liquor (and it's ME). Because it need a load of rum. be sure to use the one that you love, the one that you can drink it by itself is the best. If you don't have dark rum, other kinds of liquor can be used too. This year will end in less than a week, there are a lot of things that I want to start next year, like making my own cookbook (handmade one ^^), writing diary and etc. New year is the best chance to looking back on the past and start a new goal, I can't wait for it now. Fruit Rum Cake Make 20x8 loaf cake 100g .............................. Dried fruit (I use Cherry, fig, raisins, cranberry and orange), cut into small pieces 80ml .............................. Dark rum 100g ............................... Salted butter 50g ................................. Brown sugar 50g ................................. Granulated sugar 2 ..................................... Eggs 130g ............................... Cake flour 2/3 tsp ............................ Baking powder 40g ................................. Orange marmalade For soaking and decorating 1tbsp .............................. Orange marmalade 30ml .............................. Dark rum ........................................ Dried fruits and nuts ........................................ Strained orange or apricot jam Mix dried fruit and dark rum together. Let them soak for at least 1 hour. Preheat an oven to 180C Line 20x8 cm loaf pan with baking paper. Sift the flour and baking powder together. Beat the butter until smooth, add both kinds of sugar, beat to combine. Add the eggs gradually, beat to combine. Pour half of the flour mixture into the bowl with Orange marmalade and fruit mixture. Fold to combine. Pour the rest of the flour mixture into the bowl and fold to combine. Pour the batter into the prepared pan. Bake for 40-45 minutes or until the top of the cake spring back when touch lightly. Let it cool in the pan for 10 minutes. Mix 30ml of the rum with 1tbsp Orange marmalade. Warm in the microwave until the jam melt. Brush the cake with Orange marmalade mixture. Let it cool completely. Decorate with dried fruits and nuts, and brush with Strained orange or apricot jam. Fruit Rum Cake: Delicious liquor cake!

Ya estamos casi en Septiembre, los que ya estáis de vuelta, deseo que halláis disfrutado mucho y los que estáis a punto de hacerlo espero que lo paséis genial. Después de unas semanas de descanso, vuelvo con muchas ganas a retomar el blog y de seguir compartiendo con vosotros recetas, unas veces sencillas, otras tradicionales, en ocasiones otras un poco mas sofisticadas, etc, pero siempre hechas desde el cariño, ese es el ingrediente principal que procuro que no falte nunca en las cosas que hago. Este verano he estado unos días en la Isla de Arosa, ya de regreso mientras echaba un último vistazo al paisaje me vino a la cabeza cuando era niña, de repente volví a verme junto a mis hermanos con la nariz pegada al cristal de la ventana del tren que nos llevaba a vivir a Vigo, era la primera vez que viajábamos a las Rias Baixas y veíamos las bateas de mejillones, y recordé como mi madre trataba de explicarnos de manera sencilla lo que eran mientras nosotros, curiosos y expectantes la asediábamos con montones de preguntas. Fueron cuatro años que marcaron mi infancia, curiosamente nunca mas volví a Vigo aunque con posterioridad viví en Galicia durante otro largo periodo de mi vida, de aquella época guardo muy gratos y bonitos recuerdos. Éste plum cake, es un homenaje a un maravilloso matrimonio amigo de mis padres de aquellos años, Eduardo y Balbina, ella además una excelente cocinera, raro era el fin de de semana que no nos obsequiaba con alguna preparación, de hecho el último recuerdo que tengo de ellos es en la estación de Vigo con un plum cake de nueces en las manos, seguro que infinitamente mejor que éste, a modo de despedida. Para preparar ésta receta he tomado como fuente la del Echaurren de Francis Paniego perfectamente explicada en El cocinero fiel., y que he adaptado un poco a mi gusto. En las fotos superiores, podéis ver el precioso Molde Plum Cake de Emile Henry que he utilizado en la preparación y que podéis encontrar en Claudia&Julia. PLUM CAKE DE NUECES INGREDIENTES: 325 g. Harina 250 g. Mantequilla 250 g. Azúcar glas 4 Huevos pequeños a temperatura ambiente 10 g. Levadura de panadero 10 g. Levadura Royal 100 g. Nueces troceadas 1 Vaina de vainilla Glasa: 100 g. Azúcar glas Gotas de zumo de limón ELABORACIÓN: Para evitar que no se nos corte la masa, sacamos los huevos y la mantequilla de la nevera un rato antes de preparar el plum cake y dejamos a temperatura ambiente. Ponemos la mantequilla en un bol y añadimos el azúcar glas. Removemos bien con una espátula hasta integrar completamente y obtener una mezcla homogénea. Añadimos los huevos uno a uno a la mezcla anterior, teniendo cuidado de no añadir el siguiente hasta no estar perfectamente integrado el anterior, así hasta terminar con los cuatro. Mezclamos la harina con la levadura Royal y la de panadero la disolvemos en un poquito de agua. Tamizamos y añadimos la harina con la levadura poco a poco sin dejar de remover con movimientos suaves. Una vez incorporada toda la harina, añadimos la levadura disuelta en agua y continuamos removiendo. Agregamos entonces las nueces troceadas y las semillas de la vaina de vainilla. Volcamos la masa anterior sobre un molde encamisado con mantequilla y harina. Horneamos a 180º alrededor de 50 minutos o hasta que al pinchar el plum cake, la aguja salga limpia. Sacamos del horno y dejamos unos minutos dentro del molde. Desmoldamos y dejamos enfriar en una rejilla. Para preparar la glasa, ponemos el azúcar glas en un bol pequeño y añadimos 2 o 3 gotas de zumo de limón, Removemos bien hasta obtener una glasa brillante, si es necesario, añadir alguna gota mas zumo, pero siempre de gota en gota, para evitar que nos quede demasiado líquida la mezcla y sin la consistencia adecuada. Volcamos sobre el plum cake frio, y si queremos adornamos con alguna nuez que hayamos reservado o con los frutos que prefiráis.
