Wondering why this lemon cake recipe is called ‘meltaway’? Well, it’s the only way to describe the heavenly sensation of the moist, buttery cake melting away in your mouth - you really do have to try it for yourself. The sweet glaze on top adds another lemony touch, but it does require 1 hour to set so make sure you ice the cake well before you plan to serve it. We think this lighter, spongy cake is perfect to serve for morning or afternoon tea, or even as an after-dinner dessert. If you love lemon melting moments, you’ll love this cake.
I can't think of a better solitary treat: making something that needs unmoulding is nerve-wracking when you have to do it in front of people; alone, it gives a rather delicious frisson, and the bestowing of a hushed and hallowed moment. Creme caramel is just such a ridiculous thing to be making for oneself; therein lies the gift of it. And then there's the dreamy softness of the mild custard, the scorched syrup that counters it: eating it is a transporting experience. I know it's customary to use both cream and milk in a creme caramel but to me it's the delicacy, the lack of richness, of the custard that gives it its teasing elegance. And, it's true, I used just yolks for it, rather than the more usual combination of whole egg and extra yolk, because that's what I needed to use up, but I would never toughen the texture of a creme caramel with an egg white again: this version is so exquisitely tender, its set so soft, it's like a whisper on the lips. That ethereal quality is partly, too, due to the way it's cooked. The water bath is routine enough, but covering it for the first 30 minutes it's in the oven helps it cook more gently still, as it protects the top from even the low heat it bakes at; it does need to be uncovered for the last 20 minutes, though, or else it won't hold its form when unmoulded later. For US cup measures, use the toggle at the top of the ingredients list.

In How to Eat, I suggested this as a recipe for two. Yes, my portions are always generous, but the thing is, on certain days, we just ate this, the two of us, for supper in its entirety. Or almost: I always had custard to pour over, too. Cooked more traditionally, it’s enough for 3 comfortably, and if you have small children eating with you, then it’ll stretch to 4. If you don’t have marsala to hand, do use rum; if you want to do without the alcohol altogether, then use apple juice to plump up the sultanas. I use an oval pie dish for this, squat dish, rather than wide and shallow with a capacity of just under a litre / 4 cups. You can go smaller, but don’t go larger. For US cup measures, use the toggle at the top of the ingredients list.
One of the ancient axioms of dinner parties is this: Do not make a recipe for the first time when you have guests coming over. But some recipes are an exception, like this one, which I tested for the first time on a full table of guests. They loved its layers of shatteringly crisp phyllo, the light swirls of yogurt, and the filling of chopped raisins, honey, and pistachios — rather like a lighter, deconstructed baklava.
