Whenever I’m traveling near the little beach town of Morro Bay, California, I make it a point to stop at Shine Cafe to order their “famous tempeh.” You can get a scoop of this perfectly seasoned tempeh and quinoa in a salad, in taco form, or as part of a one-bowl meal — any way you get this dish, it’s tasty, healthy, and filling.
You’ll have a tempeh tantrum when you realise what you’ve been missing out on. This crispy plant based protein sauce can be found under names like ‘Tempe Kecap’, ‘Tempe Goreng’, ‘Tempe Kering’ or ‘Kering Tempeh’ - all alluding to the fact that it’s deep fried and spicily sauced tempeh. The tempe is cut into small matchstick pieces and deep fried/dried out intensely until there’s not a wick of moisture left. The dried out tempe is then clad in a rich sauce using kecap manis (sweet soy sauce), chilli, tamarind and aromatics like lemongrass, shallots, ginger and garlic.. but it stays crispy! Perfect in Indonesian mixed rice (nasi campur) or as a saucy meal prep protein source.
Cutting the tempeh into small triangles for this recipe ensures that it roasts beautifully and soaks up plenty of marinade. Add extra veggies to the roasting pan as you like—we love cauliflower or broccoli alongside the Brussels sprouts, too.
