Here’s the recipe for tigrillo, a fried green plantain scramble with butter, eggs and crumbled cheese, a popular breakfast on the coast of Ecuador.
'Tigrillo' is an Ecuadorian specialty of mashed green plantains scrambled with queso fresco and eggs, usually served for breakfast. Though I think it's appropriate for any time of the day.

LONGITUD: 53 – 79 CM. COLA: 33 – 50 CM. PESO: 2,3 – 5 KG. UNIDAD SOCIAL: SOLITARIO. ESTADO: CASI AMENAZADO.

© Ana Dracaena, Dracaena Photography.
