Created in Cuba in 1915, El Presidente was originally made with 2 parts vermouth and 1 part rum–a very old-school low-alcohol drink. Over the years, bartenders have flipped the proportion in favor of rum, but at the Sunken Harbor Club in Brooklyn, Garret Richard lands in the middle with a half-vermouth, half-rum drink. At the Sunken Harbor the grenadine is homemade, but there are good, not-too-cloying versions available in shops now, too. This recipe can also be found in Mr. Richard’s recently published book, “Tropical Standard” (Countryman Press).

(Crushed ice is whole pieces of ice pulverized into smaller hard bits, while pebble ice is shaved ice that’s been compressed into rods and broken into crunchy bite-sized bits.) But one thing all parties can agree on is that it’s “the good ice,” so dubbed by The New Yorker food authority Helen Rosner, who wrote a story extolling the virtues of its crunchy texture and chilling ability.
