Modernist Cuisine: The Art and Science of Cooking är nog den mest uttömmande bok om kökskonsten som någonsin utgivits. Kvaliteten på bilder, recept och förarbete är oöverträffad, men även kvantiteten är imponerande; fördelat över sex böcker (varav en är vattentät för köksförhållanden) och 2.438 sidor samsas vetenskapliga rön om matens kemi, fysikaliska förutsättningar, råvarukunskap, fantastiska recept och ögonbedövande vackra bilder.Chef för och initiativtagare till mammutprojektet är Nathan Myrvold, doktor i teoretisk och matematisk fysik och kockutbildad i Paris. Myhrvold, som i många år var teknisk chef och chefsstrateg på Microsoft, beslutade att lägga några av sina surt förvärvade miljoner dollar på att ta fram en bok som skulle överträffa allt annat. Projektet påbörjades 2006, och det tog en besättning på 50 personer och 14 oberoende faktakontrollanter fram till mars 2011 innan den första tryckningen fanns i butik.Modernist Cuisine: The Art and Science of Cooking innehåller förutom ingående förklaringar om matens kemi och tillagningens fysikaliska processer.
