Years ago, there was a very quaint, very charming little restaurant in Grafton, IL called Elsah's Landing. Known for their cinnamon rolls (the town, I'm told, always smelled very cinnamon-y early in the morning) and pies, the establishment became so successful that an offshoot called Something Elsah opened up in Plaza Frontenac shopping center in an affluent suburb of St. Louis. Unfortunately both are now closed, but thanks to the wonderful Special Request Cookbooks published by the St. Louis Post-Dispatch, we can still enjoy some of their delicious desserts. I am not a pie person, but this pie is not only relatively easy to make, but knock-your-socks off delicious. Praline Custard Pie from Something Elsah Restaurant (Printable Recipe) 1/3 cup packed light brown sugar 1/2 cup chopped pecans 1/3 cup plus 1 T/ butter, divided 1 (9-inch) baked pie shell 1 cup granulated sugar 3 T. cornstarch 1/8 t. salt 3 egg yolks 2 cups milk 1 t. vanilla 1-1/2 cups whipped cream, plus more for optional garnish Lightly toasted pecans pieces, for option garnish Preheat oven to 450 degrees F. In a small pan, heat brown sugar, pecans, and 1/3 cup butter; cook and stir until; butter is melted. Spread in baked pie shell; place in oven and bake 5 minutes. Let cool. Combine granulated sugar and cornstarch in a medium saucepan. Beat in salt, egg yolks and milk. Cook over medium heat until very thick, stirring constantly. Add vanilla and remaining 1 tablespoon butter; cook and stir just until butter is melted. Measure out 1 cup custard; set aside. Pour remaining custard into prepared pie shell. When the 1 cup of custard cools, fold in whipped cream. Spread on top of pie; chill. Garnish with toasted pecans, dollops or whipped cream, or both. Another thing that I always thought that I would never do was this date tart. That sounds dramatic doesn't it? But this date tart is legendary - created by Lorraine Godsmark when she worked at Rockpool in 1984 it has been on the Rockpool menu since 1989 where they still use the original recipe. When I interviewed Lorraine she mentioned that she is the only member of staff at Lorraine's Patisserie to make date tart.
Sugar Cream Pie is an egg-free pie with a creamy filling flavored with vanilla, cinnamon, and nutmeg. Great served warm or chilled with a little whipped cream.
Ingrediënten: - 6-8 preien - 60 g boter - 2 el fijne kristalsuiker - 4 velletjes diepvries roomboterbladerdeeg (ontdooid) - 100 g verse geitenkwark of feta van goede kwaliteit - blaadjes van een paar takjes tijm en/of dragon Bereiden: 1. Verwarm de oven voor op 200' C. 2 Verwijder de buitenste bladeren van de prei, spoel het zand eruit en snijd de prei in stukken van 3 cm, zorg dat de ringen in elkaar blijven zitten. Smelt 40 g boter met 1 el water in een ovenvaste koekenpan van 22 cm doorsnede of een tatinvorm. Zet de stukken prei rechtop en dicht op elkaar in de pan, zodat ze blijven staan. Stoof ze 5 minuten op middelhoogvuur, je hoeft ze niet te keren. (Ik heb ze iets langer gesmoord, in totaal 10 min. ze moeten bijna gaar zijn, dus vrij zacht). 3. Smelt intussen de andere 20 g boter met de suiker in een andere pan en laat iets karameliseren. Schenk dit zodra het heet en goed gemengd is rondom de prei in de pan. 4. Leg de plakjes bladerdeeg (je kunt ook een rol uit de koeling nemen) op elkaar en rol ze uit tot een cirkel van 28 cm. Leg het deeg over de prei en zorg dat de preistukjes goed tegen elkaar aan blijven staan en druk de randen omlaag rondom de zijkanten. Prik een paar gaatjes in het deeg om de stoom te laten ontsnappen. Zet de taart in de oven en bak de taart 20-25 minuten tot het deeg goudbruin en gaar is. 5. Neem de pan uit de oven, schud hem even heen en weer, zodat de taart loskomt. Zet een groot bord op de pan en keer het bord met de pan in één beweging om. Pas op, want de karamel kan erg heet zijn! Als niet alle stukjes goed mee zijn gekomen, dan kun je ze terug zetten op de taart met de gekarameliseerde kant boven. 6. Schep een paar lepels geitenkwark op de taart en strooi de kruiden erover. Bestrooi nog met wat zeezout en versgemalen peper. Serveer de taart lauwwarm. Tip: Zet de pan met prei tijdens het bakken op een voorverwarmde bakplaat in de oven. Dat geeft de onderkant met de prei nog een extra boost bij het karameliseren. Bron: "Delicious" september 2013 uit het boek "Matt Preston's 100 beste recepten". Deze tatin trok meteen mijn aandacht toen de Delicious van september in de bus viel, maar ik heb geen ovenvaste koekenpan en geen tarte tatin vorm. Ik heb het recept gemaakt in een bakvorm van 23 cm doorsnede (geen springvorm), ingevet en op de bodem een stuk rond uitgeknipt bakpapier gelegd. De prei heb ik eerst rechtop gesmoord in een koekenpan en toen voorzichtig weer rechtop gezet in de vorm. Toen de karamel gemaakt en die er omheen gegoten. Het bladerdeeg eroverheen gedrapeerd en aan de randen goed ingestopt. Het werkte perfect en de taart kwam er in één keer mooi uit! Het is echt een héérlijk recept, het zoet van de karamel smaakt ontzettend lekker in combinatie met de prei. I.p.v. geitenkwark heb ik er wat zachte geitenkaas over verkruimeld, wat ook lekker was, prei - geitenkaas is altijd goed. Verder heb ik én tijm én dragon gebruikt en ik vond beide kruiden, vooral de dragon er erg lekker bij smaken. Een recept dat ik zeker vaker ga maken. Wij aten de taart met z'n tweetjes helemaal op, dus als je het voor meerder personen wil maken, geef er dan een salade bij. In de Delicious adviseren ze een ijsbergsalade met schijfjes komkommer, reepjes zure appel, zoals granny smith, besprenkelt met een beetje citroensap.

Not too long ago I watched the delightful BBC series “Two Greedy Italians,” in which chefs Antonio Carluccio and Gennaro Contaldo travel through Italy sharing favorite recipes. In one episode, Carluccio whips up a warm, flaky apple strudel, and the allure was so great that after watching I ran to the kitchen to make my own. There was only one problem: I didn’t have any apples. It was time for a little improvising.

Have you ever made your own Strudel Pastry? It was fun sharing recipes at a recent reunion. Today I'm sharing with you a new favorite. And the beauty of this is that it's simple and quick to make and the results are delicious. Use any kind of fruits and you have fresh strudel. Strudel Dough 2 cups flour 1 cup butter 1 cup sour cream Grate butter into flour and use a pastry blender to mix ingredients together. Then add your sour cream and form a ball. Divide the ball into two halves and refrigerate for 30 minutes. Roll out one ball into a rectangular shape 12x9 (thinking in thirds) The dough should be thin enough and yet pliable enough to fold over. Fill with fruit mixture. Place on parchment-lined cookie sheet and bake at 400 degrees for 25 minutes. Leave it cool on the parchment paper prior to transferring to a serving plate. This dough is enough for 2 strudels. You can store the other ball in the fridge until needed. Fruit Options sliced apricots, peaches, apples or any fruit in season blackberries are my favorite...you can mix and add and adjust your sugar mixture. Sugar Mixture/Thickening 2 cups sugar 1/4 cup flour 1/4 cup cornstarch Only use about 3/4 cup of this mixture for one strudel. TIP use a 1/4 cup more flour or cornstarch when using berries. Prepare the fruit first and you can leave the peel on when using transparent apples. Prepare Sugar mixture in a bowl. Sprinkle 1/4 cup sugar mixture over the center of dough. Top with fruit and add 1/2 cup sugar mixture along the strip/top of fruit. Fold dough over half of the fruit mixture and then fold the other half. Seal pastry edges by simply dabbing your fingers with water. Store extra sugar mixture in container. I have used Anneliese's sugar mixture which is also featured in our first book Mennonite Girls Can Cook, page 174. Sometimes I double this mixture and keep it on hand so that whenever I want to make a quick strudel or perishky it's always ready to go. Icing (optional) 1/2 cup icing sugar 1 tablespoon cream 1/4 teaspoon almond flavor. Mix ingredients together to make a smooth consistency. Drizzle over strudel when cool and add a few toasted slivered almonds. You can garnish it with some icing and almonds or you can leave it as is. Once again, the beauty of this dough is that you can use any fresh fruit that you have at your local market. I made one strudel with apples and one with apricots. Mix the flavors with fresh blackberries. You always know that when the last piece is taken, it must have been really good.
