Brandy-snap basket with vanilla ice-cream and strawberries will forever hold a special place in my heart. It was the dessert that we had on our wedding day. It was our 4th year wedding anniversary last Friday (OMG, has it really been 4 years?). So I thought I will attempt to recreate this very special dessert. It came out perfect on my first attempt. A little fussy to make, but not difficult at all. I do love the delicate lace-like texture of the basket. Brandy-snap Baskets (adapted from Matt Moran When I Get Home) Makes about 10-12 baskets 120 grams unsalted butter, softened , room temperature 140 grams brown sugar 180 ml liquid glucose 2 teaspoons brandy 140 grams plain flour To make brandy-snap baskets: In an electric stand mixer with paddle attachment, beat butter and brown sugar until light and fluffy. Add glucose and brandy, beat until well incorporated. Using a spatula, carefully fold in flour until just combined. Cover and refrigerate for an hour until firm. Don't leave the mixture in the fridge for too long or it will be too stiff to work with. Preheat oven to 180 degrees celcius conventional (or 160 degrees celcius fan-forced). Using a tablespoon, scoop out a tablespoon of mixture. Roll out the mixture between two sheets of baking paper to about 10cm diameter and 1mm thick. For a neat finish, use a large 10cm cookie cutter to make 10cm round, scrap off excess around the cookie cutter. If the mixture gets too soft to work with and sticks to the baking paper, put it in the freezer for 1 minute to firm up. Place the disc on a baking tray line with baking paper. Bake for 8 minutes or until golden brown. The disc will starts to bubble, creating the beautiful and delicate lace-like texture. Keep a close eye on it as it will start to burn very quickly. Remove from oven, and cool for 15 seconds. Working very quickly, place the disc on an upside-down bowl or mug. Carefully peel off the baking paper, and press the sides of the disc to form a basket. Set aside to cool. Repeat steps above with the remainder of the mixture. (Note: Keep the mixture in the fridge while working on the disc.) Store in an airtight container until required. Serve with vanilla ice-cream and fresh strawberries.
I’ve made this salad at least a dozen times since snap peas appeared at the market. I’m crazy for it. It’s dead-simple to throw together, but it looks like a million bucks on the plate. It’s equally suited to a solo desk lunch, or as an impressive dinner party starter. I’ve brought it along on picnics, each element prepped ahead of time, and then thrown it together in minutes on site. (Scale up for a larger crowd.) It’s fresh and bright and wonderful and—please just try it. This isn’t a salad of precision—add more of whichever ingredient you like best. You can use a big ball of burrata for this salad (tear it up with your hands), but I also like using smaller burratini; in this case, I usually dice instead of tear. You could also use a ball of regular, soft mozzarella, if you can’t find burrata. I prefer breakfast radishes when I can find them, but the recipe doesn’t demand it. Substitute or add your favorite herbs, especially fennel fronds. Cured ham or fava beans would make this more of a meal. Serve with plenty of crusty bread, for sopping up the vinaigrette. Finally, it’s worth springing for a high-quality finishing olive oil and sea salt here—it makes a difference. (I'm taking the liberty of assuming that salt, pepper, and olive oil count as pantry staples...)

Operación Pastelitos Estimados amigos, siguiendo con la reciente convocatoria para que nuestros lectores se animen a cocinar y presentar sus mejores recetas, hoy recibimos a Asmae Mekrane, una joven cocinera y talentosa fotógrafa marroquí. Asmae lleva esta pasión en la sangre desde muy pequeña, cuando se metía cocina para deleitar a su madre, recibiéndola con alguna de sus delicias cada vez que ella volvía cansada del trabajo. Crepes, bizcochos, jugos de diferentes tipos y combinaciones eran la excusa perfecta para para prodigar su amor de hija. Siempre inventaba algo nuevo y delicioso... bueno, casi siempre, porque como seguramente nos ocurrió a todos, al principio también tuvo sus pequeños y divertidos tropiezos. Abandonó momentáneamente la cocina por sus estudios, hasta que un día se enamoró de un joven español. Decidió a dejar atrás su Rabat natal para afincarse y formar su propia familia en Madrid, ciudad en la que vive hasta el día de hoy desde hace más de 8 años. Convertida en madre y ama de casa, volvió a disfrutar de su verdadera pasión, sobre todo a la repostería, a la que pronto piensa poder dedicarse en forma profesional. Hoy compartirá con nosotros un refinado plato de la gastronomía marroquí, muy tracidional en las fiestas. Algo que según ella todo el mundo debería preparar al menos una sola vez en la vida. Aromas, sabores, especias y hierbas se combinan para dar lugar una obra de arte efímero realmente exquisita. Se trata de una pastela o pastila o bastilla (en árabe, bastil·la بسطيلة) un plato en donde interactúan sabores salados y dulces con un delicioso aroma a canela, jengibre y azafrán. Lleva pollo especiado con cebollas rehogadas, huevos cocidos en salsa y almendras fritas que se cierran en hojas de masa brick o warka. Esta masa se presenta en unas finísimas láminas hechas a base de harina, agua y sal. Es parecida a la pasta filo (por la que se la puede reemplazar) y se puede encontrar en la zona de los refrigerados en tiendas de productos árabes. Todo se hornea para darle a la hoja brick un toque crujiente y un color dorado precioso. También suele hacerse con otros rellenos como pescado y paloma, y se la prepara como una tarta grande, o en un formato individual más pequeño. Ingredientes: Para el pollo: Pollo: ............................. 1,5 kg aproximadamente. Cebolla: ......................... 4 medianas Perejil fresco: ................. 1 manojo Aceite de Oliva: ............. 6-8 cucharadas soperas Agua: ............................. 1 vaso pequeño Jengibre molido: .............. 1 cdta. de café Canela: ........................... 2 ramas Azáfran: .......................... unas hebras (5-6) Cúrcuma: ........................ 1 cdta. de café Colorante alimentario: ....... 1 pizca Sal y pimienta: ................. a gusto Para la salsa de huevos: Huevos medianos: ..............8 Perejil fresco: .................... 1 cda. sopera Miel: ................................. 1 cda. sopera Azúcar: ............................. 2-3 cdas. de azúcar Canela en polvo: ................ 1 cdta. de café Sal: ................................... a gusto Para las almendras: Almendras: ........................ 250 g Azúcar: ............................. 100 g Aceite neutro: .................... cantidad necesaria Agua de azahar: ................. 1 cdta. de café Canela en polvo: ................ a gusto Para la hoja brick: Masa brick: ........................... 1 paquete (suele llevar 10 hojas) Manteca/ mantequilla fundida: . 60-80 g Yema de huevo: ..................... 1 Para decorar: Azúcar impalpable o glas: ...... a gusto Canela molida: ...................... a gusto Preparación: El pollo: 1. Lavamos el pollo y lo dejamos escurrir bien. Luego pelamos las cebollas y las cortamos en una fina juliana. 2. En una olla o cazuela grande, calentamos el aceite de oliva y luego introducimos las cebollas. 3. Una vez que empiecen a transparentar sumamos el pollo. En este caso se utilizó un pollo y medio bien pequeños, pero nada impide usar una sola pieza más grande. 4. Dejamos dorar bien en todas sus partes. 5. Es momento de agregar las deliciosas especias que le darán todo el característico sabor marroquí: Jengibre, cúrcuma, la canela en rama y el colorante alimentario. También salpimentamos a gusto usando pimienta recién molida. 6. Agregamos abundante perejil fresco previamente picado. 7. Bajamos el fuego y tapamos nuestra cazuela, poniendo encima de la tapa unas hebras de azáfran para que con el calor se sequen un poco y empiece a aflorar todo su delicioso aroma. Es solo un par de minutos, así que cuiden de no pasarse para evitar quemarlo. 8. Tomamos las hebras de azáfran y las frotamos entre los dedos sobre el pollo, a fin de liberar todo su sabor. 9. Removemos bien para amalgamar todos los sabores, añadimos un vaso pequeño de agua y tapamos. Dejamos cocer a fuego mínimo entre 45 minutos y una hora, revolviendo de vez en cuando para evitar que la preparación se nos pegue en el fondo y comience a quemarse. Es importante que la olla tenga doble o triple fondo, de lo contrario les recomiendo utilizar un difusor de calor. La salsa de huevos: 1. Cuando el pollo esté bien tierno y dorado lo retiramos de la olla, lo dejamos enfriar. Le quitamos la piel y lo deshuesamos, cortándolo luego en trozos pequeños. También removemos las ramas de canela de la salsa. 2. Mientras tanto, seguimos cocinando a fuego lento la salsa donde ha hervido el pollo, agregándole la miel, el azúcar y la cucharadita de canela molida. 3. Removemos la salsa con una cuchara de madera hasta que espese. 4. Cascamos los huevos, vertemos su contenido en un recipiente, salamos a gusto y los batimos con una varilla de mano. Luego los introducimos a la salsa. 5. Primero revolvemos con una cuchara de madera, luego batimos energéticamente con la varilla de mano. Tenemos que llegar al punto en que se cuezan los huevos y no se vea ningún líquido. 6. Cuando vean que los huevos se han coagulado totalmente en la salsa, llevamos la preparación a un colador, la escurrimos bien para sacar la humedad remanente y la dejamos enfriar por completo. Las almendras: 1. Introducimos las almendras en agua hirviendo por unos 5 minutos. 2. Las pelamos según el sencillo procedimiento que podrán ver haciendo click en la imagen de abajo. 3. Luego las freímos en algún aceite neutro (canola, maíz, girasol, etc) hasta que se doren. 4. Las disponemos sobre un papel de cocina absorbente para quitar el exceso de grasa y las dejamos enfriar. 5. Luego las trituramos en un robot o procesadora, pero sin molerlas del todo para poder seguir apreciando su textura. 6. Finalmente agregamos el azúcar, el agua de azahar y la canela, mezclamos bien y reservamos. Montaje: 1. Fundimos la manteca / mantequilla y con ella untamos cuatro hojas brick (hojas masa filo) utilizando una brocha. 2. Tapizamos un molde redondo (de unos 28 cm de diámetro) apto para horno con las cuatro hojas brick untadas de la siguiente manera: 3. Untamos otra hoja con manteca / mantequilla y la ponemos en el centro del molde. Apretamos un poco con las manos. Luego empezamos a colocar el pollo troceado. 4. Una vez que introducimos el pollo presionamos bien con las manos y continuamos con la segunda capa consistente en los huevos cocidos en salsa. Aplanamos bien con una cuchara. 5. Separamos con una hoja brick untada con manteca / mantequilla fundida. Terminamos de hacer una útlima capa con las almendras procesadas que habíamos reservado. 6. Cerramos nuestra pastela con dos hojas brick previamente untadas con mantequilla fundida y sellamos los bordes con la yema de huevo ligeramente batida. 7. Horneamos en el horno precalentado a 180ºC y colocando el molde en la parte inferior durante 20-25 min. En los útlimos 5 minutos horneamos en la parte superior para que se dore la superficie de la pastela. Una vez hecha, la sacamos y la dejamos enfriar unos minutos. Le damos la vuelta para sacarla del molde y le volvemos a dar la vuelta encima del plato de presentación. Tradicionalmente se suele decorar con canela molida y azúcar glas o impalpable haciendo rombos. Asmae, una verdadera cultora de la estética, espolvoreó toda la superficie con este tipo de azúcar y luego puso un stencil que espolvoreó con canela molida haciendo un hermoso diseño. Solo nos resta disfrutar de esta maravilla marroquí, muchas gracias Asmae!!! ¡¡¡Besaha w raha!!! ¡¡¡Buen provecho!!!
