I like to use a paper towel with a little butter on it to swipe the pan before adding the batter. This recipe works best with a non-stick pan or a crepe maker. Tooooodos amamos los panqueques. Son suavecitos, esponjocitos, dulces y perfectos para empezar el día. ¡Estos panqueques de plátano se hacen con harina de almendras para que sean sin gluten y son súper ricos! No necesitan endulzar la masa porque con el plátano es suficiente. Son en verdad la receta perfecta para su desayuno o brunch. Puedes hacer estos panqueques de plátano también con harina de trigo si prefieres pero me gustó darles la opción sin gluten y especialmente con harina de almendras que es tan rica. Puedes usar harina de avena también pero asegúrate que sea certificada sin gluten si es lo que necesitas. Lo único malo de que sean sin gluten es que hay que tener un poco más de cuidado al cocinarlos. La temperatura de la sartén tiene que ser bajita y se demoran un poco más en cocinarse. Del primer lado se toman unos 3-4 minutos y luego del otro unos 2. Por esta razón hay que tener el calor de la sartén bajito para que no se quemen. Como se demoran mas, te recomiendo que tengas un horno prendido a 100°C para mantenerlos calientitos a medida que cocinas el resto. Lo otro que les recomiendo es que hagan panqueques pequeños de unos 6cm de diámetro para que puedan voltearlos con facilidad. Las harinas sin gluten tienden a ser más delicadas que la de trigo así que así vas a poder voltearlos con confianza. Si quieres hacer los panqueques clásicos obviamente les dejo también mi receta de estos panqueques de arándanos que puedes hacer con o sin los arándanos :).
