Empire Biscuits First, Coronation Chicken, now Empire Biscuits We are getting all regal and above ourselves around here...... Empire Biscuits are one of Mr Tartan Taste's favorite biscuits Empire Biscuits (a biscuit is another name for a cookie in Scotland) also go by the name of Double Biscuits, because that's exactly what they are, 2 biscuits sandwiched together with jam I call them happy biscuits as they look happy and cheerful. OK, lock me up now, my cooking and baking items are starting to have personalities. Yikes. Scottish Empire Biscuits While I was making them yesterday, I was thinking that these biscuits are quite festive, I think these would make good Christmas cookies. Oh wait, wouldn't these also make good Breast cancer awareness cookies? I mean they kinda look like Boobies ..... OK stop me again please So, Mr Tartan Tastes remembers them also having a jelly sugar diamond or dome on top, I remember them with a cherry on top, so since I can get cherries easily, a cherry on top it is These biscuits are incredibly easy to make, I was surprised. They don't take too much time, the longest part was waiting on them cooling so they could get iced. I got the recipe from my abundance of Scottish Cookbooks Makes 12 You will need 1 cup of sugar 1lb Butter 4 cups of All Purpose or Plain flour 3 cups of powdered sugar (icing sugar) some milk 6 Maraschino Cherries Cream Butter and sugar together until soft and fluffy Cream butter and sugar Slowly sift in Flour, mixing well sieve in flour Knead mixture lightly to form a soft moist dough form a dough Using a rolling pin roll out onto a floured surface, about quarter inch thick Cut out rounds, I used a drinking glass about 2 and a quarter inch diameter (keep re-rolling the dough to make 24 rounds) cut out rounds Place on well greased baking tray on the baking sheet Bake in oven at 350F for 10 minutes, until white and pale in color leave on baking tray for 1 minute then place on a wire rack to cool biscuits all baked, cooling Once completely cooled, pair them up and sandwich together with strawberry jam (not too much as they will slide) adding the jam made into a sandwich Next make the Icing, take the 3 cups of powdered sugar and add a splash of milk, them stir in, keeping stirring and adding milk a splash at a time until you make a fairly stiff icing (if its too runny it will just slide down the sides of your biscuits) Spoon a large teaspoon sized blob of icing onto the top of each biscuit carefully, using a knife dipped in warm water, spread the icing to cover the top icing on top Cut your 6 Cherries in half, making 12 and place a cherry on top of each biscuit Empire Biscuits Enjoy straight away with a nice cup of tea Empire Biscuit with a cherry on top Go on give them a try Hope you enjoy your Empire Biscuits or Double Biscuits Angela Today I am linking up at Serenity Now Linking up at Sugar Bee Crafts ; Reasons to skip the housework/(blast-from-the-past) ; wrinkledmommy - TALU

Ahh Scottish Oat Cakes A cute little oaty cracker, fantastic with a lump of Scottish Cheddar, enough said Scottish Oat cakes Why oh why have I never thought of it before..... Make my own Oat Cakes I crave these little oaty biscuits for cheese I used to put in a special request for Oat Cakes with my Mum and Dad all the time, they needed to bring a few in their suitcase on visits from Scotland to Texas, and they had to be the rough homemade looking ones, my Dad, who is also an Oat cake specialist in my eyes, knows what I mean when I request a certain type, we both share the same opinions about the ply-board looking ones I hate the ones that are like compressed ply board shavings ....ewww they need to be oaty and grainy for me and these oat cakes I am making today hit the mark, I got a tad excited when I saw that rough raw oatmeal was used and sprinkled in this recipe Bet my dad wont believe it, yes Dad I am making Oat Cakes now.... Makes 12 You will need 110g/4oz Medium Oatmeal 25g/1oz Plain or All Purpose Flour 25g/1oz Butter quarter cup boiling water pinch of Baking Powder Pinch of Salt Pinch of Sugar Ingredients for Oat Cakes Place Oatmeal into a large mixing bowl then sift flour, salt, sugar and baking powder into the oatmeal, Mix well Pour boiling water into a separate bowl and add the butter and gently stir until butter is melted Butter and boiled water mixture Add hot butter mixture to the dry ingredients in the large bowl Oatcake mixture Mix well until mixture is spongy (add more water if needed) Oatcake mixture Turn mixture onto a surface covered with dry oatmeal then sprinkle more oatmeal on top Oat cake mixture Flatten and roll dough until quarter inch thick or slightly less Using a cookie cutter or drinking glass around 2.5cm diameter, cut into rounds. Keep re-rolling mixture until all used, makes 12 rounds Cutting Oat cakes Oat Cake rounds ready for the Oven Place on a cookie sheet/baking tray and Bake in oven at 180C or 350F for 20-30 minutes until dried out but still pale looking Leave to cool before enjoying, especially with a nice Mature Scottish Cheddar Oat Cakes Oat Cakes and Cheddar Perfect, who knew it was that easy.... I've been busy testing recipes for two Georgian cookery classes taking place this week, hence the silence on the blog. I cannot yet blog about any of the Georgian dishes, so instead you'll get a recipe for this simple lemon cake. It's based on a recipe from a Scottish food writer, Claire MacDonald. It's a nice, lemony, moist and crumbly small cake that's perfect with a cup of tea on a cold afternoon. We still have LOTS of snow over here, so cakes like this are totally justified and even more, needed :) You'll get a small cake that feeds five to six. Scottish Lemon Sponge Cake (Mahlane šoti sidrunikeeks) 120 g unsalted butter, softened 150 g caster sugar 150 g plain flour 1 tsp baking powder a pinch of salt 2 large eggs, lightly whisked 5 Tbsp milk (75 ml) grated zest of 1 lemon Lemon syrup: 1.5-2 lemons, juiced 6 Tbsp confectioners sugar/icing sugar Cream the butter and sugar until pale and creamy. Sift flower, baking powder and salt into another bowl, mix with grated lemon zest. Add the dry ingredients, milk and eggs to the butter mixture and stir thoroughly until combined. Spoon the batter into a buttered loaf tin or bundt pan. Bake in the middle of a pre-heated 180 C oven for about 40 minutes. Remove from the oven and let cool for about 5 minutes. Then carefully lift the cake out of the tin and place on a large piece of foil. Mix lemon juice with icing sugar and drizzle over the warm cake. Wrap into the foil and let cool completely before serving.
