I usually use mayonnaise but I have a few recipes that require the extra kick of Miracle Whip. Since I always have mayonnaise on hand, this recipe allows me to make only the required amount of Miracle Whip. I started with the Miracle Whip recipe from Top Secret Recipes. Miracle Whip is more tart than Mayonnaise but adding a vinegar mixture makes the resulting dressing too thin. This recipe solves that problem. I used Hellman's Mayonnaise and I have also made the diet version with Hellman's 1/2 Fat Mayonnaise.(Serving size: 1 tbsp)

When I first started working as a chef, a good custard was the foundation of many of our restaurant desserts. We called it Crème Anglaise and it was a velvety, smooth sauce made from egg yolks, whole milk, cream, vanilla bean and sugar. You could flavour it with anything you liked such as cinnamon, nutmeg, chocolate, citrus, coffee or pistachio. These days I like to make them a little healthier, using less saturated fat and less sugar that's a lot kinder to the arteries. This custard is made from a combination of eggs + low-fat milk, which is a great source of quality protein, containing all the essential amino acids needed for growth and repair.

Some say, challenging more generally accepted ideas about the provenance, that tiramisu was invented in a casa chiusa (a house of ill repute) to give the working girls a pick-me-up, as the name (tira-mi-su) suggests. Whatever its inception, this one reverts to the original formulation - although in dinkier format. This is not because I am a huge fan of the cute — you know that — but because it means you have a tiramisu worth making for fewer people (you don't need a partyful), and in less time. By which I mean very much less time, since, unlike the big, trifle-style tiramisu, these tiramisini — think coffee-soaked Savoiardi sponge fingers, topped with the familiar, whipped Marsala-spiked mascarpone in small-portioned martini glasses — don't even need to sit overnight before being ready to eat. There are some ways to make tofu that will win anyone over. Sticky tofu is one of those ways. And to call it just "sticky" is unfair to the cultural inspiration for this recipe, which is tofu dengaku, Japanese miso-glazed tofu. This recipe is very similar to that dish, but uses more soy sauce than miso, and leans a bit heavier on the sweetness of the glaze. I also opted for an Indonesian chili sauce, but if you have another that you prefer, that's totally fine too! And while I use tiny, adorable fairytale eggplant in this recipe, normal eggplant will work just fine as well.

Tsukune (Japanese Chicken Meatballs) is a regular Yakitori dish items. Soft and bouncy chicken meatballs are skewered and chargrilled with sweet soy sauce, i.e. yakitori sauce. The key to my soft and juicy meatballs is the grated onion and the amount of fat in the chicken mince (ground chicken). Don't forget to see the section 'MEAL IDEAS' below the recipe card! This, an adaption of Claudia Roden's magnificent orange and almond cake, is a wonderfully damp, dense and aromatic flourless cake: it tastes like one of those sponges you drench, while cooling, with syrup, only you don't have to.
