Never has a quick meal tasted so spectacular. Yes, you do need to hunt down this fabulous flavoured paste — think chilli with a sweet and smoky hit of almost liquorice intensity — but once you have it, the culinary kingdom is yours. In lieu of it, I suppose you could use any chilli paste you like, to taste, but I could never allow myself to run out of my exuberantly coloured gochujang — also stamped "Hot Pepper Paste (Chal)" — and so can’t report from experience. In fact, I am always ready to slide down the pole and have this at a moment’s notice: the spring onions are in the fridge; the squid is in the deep-freeze; everything else is to hand; and if I don’t have any baby corn, I am more than happy to add whatever vegetable I do have. For US cup measures, use the toggle at the top of the ingredients list.
Hamin is a traditional peasant dish. Basically, instead of throwing out the leftovers from the past week, the Jewish balaboostas of the world threw all the meat, bones, and vegetables from that week’s meals into a pot and let them simmer overnight. There are different ways to prepare hamin—and there’s plenty of room for variety.

Whether you prefer sweet waffles or savory eggs, these Victorian breakfast recipes will totally still hit the spot for your morning meal!
This fragrant dinner will have mouths watering before it even gets to the table. The meatballs are spiced to perfection with the perfect balance of sweetness from the honey and spiciness from the harissa. But what is harissa and what does it taste like? Harissa is a chilli pepper paste from North Africa, a region known as ‘Maghreb’. This deliciously spicy chilli condiment is available as a paste, but making your own only takes 10 minutes with this super easy harissa recipe. Adding harissa to staple meals is currently a bit of an addiction for me (just take a look at how good this honey harissa barramundi tray bake looks!), but adding it to meatballs is definitely a game changer. What’s more, the lemon rice is the perfect addition to the delicious meatballs - I love to match the tang of the harissa and garlic with the tang of lemon in the rice!

“I learnt this recipe at my first chef ’s job in London when I was working with Michelin-starred chef Tom Aikens. I cooked so many lamb shoulders, I started to hate them! But over the past few years, I’ve rediscovered the dish, and now I love cooking it. I want to bring people back to the table, to enjoy being together over a shared meal.” – Andy Hearnden. Recipe from Andy Cooks: The Cookbook (Oriana Press).

This Chicken Laksa is tasty, pretty and will make you feel like an absolute whizz in the kitchen - because let’s face it, making your own laksa paste from scratch is pretty fancy! It will contain more flavour and none of the preservatives and carriers of the processed bought kind. The spices provide a great depth of flavour and lots of benefits such as antioxidants and anti-inflammatory properties. Despite all the wonderful spices in this dish - it’s actually pretty mild overall. The coconut milk really mellows the spice so even people who are sensitive to spice can enjoy this one!
