Lion's Head Casserole - authentic Chinese dish - long braised meatballs with napa cabbage create a delicately flavored comfort dish.
Refer to the post for step-by-step photos on how to wrap the dumplings. My mom also likes adding dried scallops to the filling for more umami flavor. You can usually find dried scallops in Asian supermarkets. If dried scallops are difficult for you to obtain, feel free to leave it out. If you want a more indulgent filing, you can also add pork back fat to the filling. You can read more about it in the notes. This recipe makes between 25 to 30 dumplings.

This tamale recipe is about as traditional as you can get, although I use a roast instead of the whole pig head that many use. These take about all day to make and are a lot of work, but they are so worth the time and the effort. They are a huge hit here in the West. For added flavor, top with either some of the red sauce used to prepare this recipe, or with my favorite, green chili sauce with pork, recipe #20574. Serve with sides of Spanish rice, refried beans topped with cheese and frosty margaritas for a delicious authentic Mexican meal.

With today's leaner pork, the traditional crown roast technique (which requires cutting between each rib chop to form the "crown") tends to produce overcooked meat before the bone end is done. So instead, ask the butcher to french the bones of two rib racks and present them back-to-back.
What makes cheeks so good? Relatively lean, yet very moist meat. There are few parts of the animal for which this is true. Usually, you need marbled fat to get the same degree of tenderness—say, in the neck region, the shoulders, or in parts of the brisket. But cheek meat is like hock meat—the same kind of lean meat connected by lots of tissues and collagen. Cook it for a long time, and the meat breaks down into hockey-puck-sized nuggets of fork-tender flesh.
