Ingredients 3 eggs 1 pound self-rising flour 1 and 3/4 teaspoons baking powder 3/4 cup sugar 1/2 cup orange juice 2 teaspoons vanilla extract 11 tablespoons unsalted butter (room temperature) 13 ounces jam Preparation Heat the oven to 350 degrees Using 2 eggs, separate the egg whites from the yolks Place the white in a large mixing bowl and the yolks to the side in a small bowl With a handheld mixer, beat the whites until soft peaks form Add the yolks, butter, and sugar, and beat again until well combined In a tall glass, mix the orange juice, vanilla extract, and baking powder. Once the juice begins to foam, add to the mixing bowl Slowly mix in the flour.
