Hay cosas en la vida que pueden esperar: dejarse crecer el cabello, esperar la llegada del invierno, inscribirnos en el gimnasio... pero hay otras que sencillamente no pueden. Las arepitas dulces son unas de ellas, deben ser hechas en el momento de comerlas, se debe tener la mesa lista con los manteles, los platos, el café con leche, la mantequilla y el queso. Todos sentados y con las manos limpias y la servilleta metida por el cuello de la pijama. Prohibido esperar a que se enfríen porque se pondrán blandas, se desinflarán y ya nada será lo mismo. Por lo general no como frituras, y no porque no me guste -a quien no- sino porque odio limpiar el reguero y lo más importante: me cae como un plomo en el estómago si como muy grasoso y abundante, y es que sufro de hernia hiatal y cuando me excedo siento que muero. Pero la clave de todo está en la moderación, y yo que ya tenía al menos un año que no preparaba arepitas dulces, creo que bien merezco darme el gusto ¿si no qué sentido tiene la vida si la vamos a pasar privándonos de lo bueno? Pero la idea no es filosofar sobre el sentido de la vida, la idea es mostrar cómo se hace esta especialidad Venezolana que gusta a todos, grandes y pequeños. Mi tía las preparaba y recuerdo mi asombro al ver cómo se inflaban magicamente en el caldero hasta parecer un globo dorado, dulce, crujiente y oloroso a anís ¡lo máximo! Por eso este post de hoy está escaso en fotografías. Las preparé y salí corriendo a la sala a tomarle unas pocas fotos antes de que perdieran la forma, cuando regresé a la cocina ya Juan estaba sentado, con el café servido y los cubiertos en la mano, los platos puestos y el queso telita esperando. Sin embargo tuve el acierto de pedirle a mi costillo que grabara un video para registrar cómo se hacen las arepitas y mostrar cómo mágicamente se inflan en el aceite como un pez globo ¿verdad que son hermosas? Nota: el secreto para una buena fritura es la temperatura, el aceite debe estar bien caliente, de lo contrario los alimentos absorberán mucho de éste, empapandose hasta el centro quedando blandos y aceitosos, por el contrario el aceite caliente producirá una costra que evitará que el mismo penetre demasiado, evitando a su vez que el vapor de agua salga, haciendo que los alimentos queden crujientes por fuera y jugosos por dentro. Ingredientes para el melao de papelón: (aquí a nadie se le ocurriría decirle "melado" , suena demasiado snob) 1 taza de papelón (panela, piloncillo, raspadura, panocha, chancaca) rallado. Tambien se consigue en polvo 1/4 de taza de agua Ingredientes para las arepitas: 1 taza de harina PAN (harina de maíz precocida) 1/4 de taza de harina de trigo 1 pizca de sal 1/2 taza de melao de papelón 1/2 taza de agua (un poquito más si hace falta) 2 Cdas. de semillas de anis dulce Aceite vegetal de sabor neutro para freír Instrucciones para el melao Fundir el papelón y el agua en una olla pequeña, dejar espesar un poco y retirar del fuego (debe quedar más líquido que la miel, mas parecido al jarabe de maple). Dejar enfriar. Instrucciones para las arepas: En un recipiente mezclar las harinas, el anís y la pizca de sal. Crear un hueco en el centro y agregar el melao y el agua. Mezclar bien con un tenedor o con la mano y dejar reposar la masa 5 minutos para que absorba bien los líquidos. Amasar con la mano para integrar bien, si la masa está muy seca agregar un poquito de agua, la masa debe quedar maleable, suave y fácil de manipular (uff! no me había fijado en lo difícil que es explicar esta consistencia a quien nunca ha hecho arepas) Hacer pequeñas bolitas con la masa y aplastar con la mano o sobre una superficie (yo las cubro con plástico para que no se peguen). Para que queden bien delgadas también pueden ayudarse con un rodillo, un vaso o una botella, pasándolo muy suavemente sobre la masa. Las arepitas deben tener un espesor entre 5 y 7 mm Si son necios como yo, se puede utilizar una taza o vaso para cortar las arepas con forma redonda, así quedarán todas del mismo tamaño y con la forma perfecta. Freir en aceite caliente bañándolas una y otra vez con la espumadera hasta que se inflen, voltear para dorar por lado contrario hasta que se doren. Retirar del caldero y dejar escurrir sobre una servilleta de papel absorbente. Comer inmediatamente, solas o con queso y mantequilla. Da para 12 arepitas.

I'll forgive you if you don't know it. But look it up. Watch it. Seriously. It's a Canadian thing. Anyways.... jelly donuts make an appearance in the movie so that's why I brought it up. They should make an appearance in aaaalllll the movies. I mean.... J E L L Y D O N U T S are just ridiculous. Let's give them their own star on the walk of fame. Old Fashioned Jelly Donuts Ingredients Dough 2 cups buttermilk 2/3 cup sugar 4 1/2 tsp active dry yeast 1/2 cup melted butter 2 eggs, beaten 1 Tbsp vanilla 2 tsp salt 4 - 5 cups flour Filling 1 jar seedless raspberry jelly (or your favorite) Oil for deep frying (about 1 litre) sugar to roll the donuts in Directions Prepare dough - Heat buttermilk over medium heat until just starting to steam. Remove from heat and stir in the sugar and let cool for 5 minutes. Pour into a large bowl and sprinkle the yeast on top and let sit another 5 minutes - until yeast blooms. Whisk the butter, eggs, vanilla, and salt into the yeast mixture. Slowly stir in the flour until soft, but not sticky, dough forms. Knead for 5 minutes on a floured work surface. Place in an oiled bowl, cover with a tea towel, and set somewhere warm to rise for an hour. After an hour, roll out dough to 1/2 inch thick. Cut with a 2.5 to 3 inch biscuit cutter. Place donuts on a cookie sheet lined with parchment paper, cover with a tea towel, and let rise another 45 minutes or so. When the second rise time is almost up, heat your oil in a large pot to 350 degrees. (This takes about 15 minutes so start to heat it up after dough has been rising about half an hour.) Place a shallow bowl filled with sugar beside where you are going to be placing the donuts after frying. When oil reaches 350, gently slide 3 or 4 donuts into the oil and fry 1 minute on each side - until evenly browned. Remove from oil with a slotted spoon and place on paper towel to drain. Roll the donuts in the sugar to coat. Repeat until all donuts have been cooked. Let cool completely. When they are cooled off - place the jelly in a piping bag fitted with a long nozzle. Poke a chopstick or the handle of a wooden spoon into the side of each donut to create a hole. Then press the tip of the piping nozzle into the hole and squeeze in some jelly. Repeat until all donuts are filled!. These are best eaten the day they are made but can be frozen. Want to see the inside? Look at all that squishiness and gooey jelly! Personally, I like raspberry jelly the best for jelly donuts but you can use your favorite! You can also dust the donuts with powdered sugar after they have cooled INSTEAD OF the regular sugar.... but I like the regular sugar because that's how we had them growing up. NOTE - This recipe is also easy to double! The photos above are of a doubled recipe! I think you get about 1 1/2 - 2 dozen per batch (so about 3 - 4 dozen doubled).
