Seguimos descubriendo las bondades de la gastronomía guaraní, esta vez de la mano de dos paraguayas, Olga Sanchez Ranoni y Jorgelina Giménez que me enseñaron a hacer uno de sus platos más típicos y deliciosos, de gran contenido proteico e incluso ideal para los celíacos ya que su eleboración está libre de gluten. Para indagar acerca del origen del Chipá So´o debemos remitirnos a los registros jesuíticos de la época de la colonia que describían detalladamente la costumbres de los aborígenes guaraníes que ocupaban el territorio o "área guaranítica" actualmente dividida en la zona fronteriza perteneciente a 3 países: Paraguay, Argentina y Brasil. Ellos ya preparaban tortas y panes a base de mandioca, maíz, zapallo y batata; pero con la llegada de los conquistadores y los evangelizadores jesuitas, sumaron a su dieta otros ingredientes tales como: carne de vacuna y ovina, leche, huevos, quesos, etc. De esta interesante mixtura surgieron alimentos que se han consumido hasta la actualidad. Entre otros, el o la Chipá que ya hicimos en el blog, una deliciosa masa hecha a base de harina de maíz y fécula de mandioca con sabor a queso horneada o cocida de distintas maneras y el Mbeyú (hacer click para ver la receta). También el Chipá So´o que haremos hoy, relleno con un recado hecho principalmente con carne huevo y algunas verduras. Según precisiones de Margarita Miró Ibars, rigurosa investigadora de la antropología culinaria paraguaya, la “chipa so’o”, hace parte del denominado “Tyra”, término guaraní que sirve para designar todo alimento que se consume para acompañar el “mate cocido”, la leche o el café o que simplemente se prepara para complemento de otros platos. El proceso de preparación que describiremos detalladamente más abajo se puede resumir de la siguiente forma: Se mezcla la grasa con la harina de maíz el queso y el caldo de cocción de la carne, amasándose todo. Con la masa ya dispuesta se forman bollos del tamaño de una galleta grande y se los ahueca con el pulgar. En el hueco se introduce el “relleno” consistente carne en picadillo, huevo y verduras. Se cierra el bollo y se le da forma, de modo a que quede como una pequeña torta. Finalmente, se colocan las tortas sobre chapa engrasada y se las cocina al horno a alta temperatura por aproximadamente veinte minutos hasta que estén doradas. Ingredientes: ( 26 unidades aprox.) Para la masa: Harina de Maíz: .............. 1,5 kg Queso: ............................. 200 g Grasa de Pella: ................ 100 g Caldo de cocción: ............ 500 ml aprox. Sal: .................................... a gusto Para el Relleno: Carne para guisar: ............ 1 kg Cebolla: ............................. 1 grande Cebolla de verdeo: ............ 250 g Ajo: .................................... 1 diente grande Pimientos de colores: ....... 1 en total Huevos: .............................. 4 Comino en grano: .............. 1 cda. de té Aceite: ................................ un chorro generoso Sal y pimienta: .................... a gusto En este caso utilizamos un corte que en la Argentina se conoce como "Palomita", aunque también pueden usar otros aptos para guisar como el roast beef o el osobuco. En algunas dietéticas de la Ciudad de Buenos Aires se consigue una harina de maíz llamada "harina paraguaya" que puede servir, aunque es algo mucho mas seca que la fresca normalmente usada en su país. Igualmente hay personas que se dedican a hacerla y venderla fresca en Buenos Aires. La harina de esta receta se consiguió en la carnicería San Cayetano de Ciudad Evita ubicado en la calle Cristianía al 6600 (tel. 1168485789). Aprovecho a pedir a todos los miembros de la comunidad paraguaya para que nos indiquen otros lugares de expendio de esta particular harina en Argentina. Preparación: El Relleno: 1. Quitamos las partes más grasosas de la carne pero sin sacársela del todo y la ponemos a hervir en una olla con abundante agua que luego utilizaremos como caldo para hacer la masa. 2. Salamos con una cucharada colmada de sal entrefina y tapamos, dejando hervir por aproximadamente una hora o hasta cuando la carne esté bien tierna. 3. Mientras tanto, hervimos 4 huevos por diez minutos, luego los pelamos y los reservamos. 4. Pelamos el ajo la cebolla y lavamos bien todos los vegetales. Los pimientos morrones pueden ser del color que prefieran, aquí hicimos un mix de 3 tonalidades que equivalen a uno completo. 5. Picamos todos los vegetales en cubos bien pequeños, separando las hojas verdes del tallo de la cebolla de verdeo. ya que tienen diferentes puntos de cocción. 5. Una vez que la carne esté tierna la retiramos y hacemos un picadillo con el cuchillo, reservando el caldo de cocción. 6.Salteamos las verduras con un poco de aceite, reservándonos los tallos verdes de la cebollita de verdeo para el final. 7. Añadimos una cucharada mediana de semillas de comino que previamente machacamos en un mortero. 8. Una vez transparentada la cebolla, agregamos la parte verde de la cebollita de verdeo y la carne picada. 9. Pisamos los huevos duros con un pisapapa, los salpimentamos a gusto y los añadimos a la preparación. La masa: 1. Comenzamos mezclando la grasa de pella o la manteca de cerdo junto con la harina de maíz. También sumamos el queso cortado en dados pequeños. 2. Vamos agregando el caldo de a poco para hidratar la harina y mezclamos bien con ambas manos hasta integrar. Utilizamos aproximadamente medio litro, aunque la cantidad puede variar de acuerdo a la calidad y humedad de la harina que utilicemos. 3. Una vez que vean que la harina forma una pasta que no se deshaga es porque está lista. Armado y Horneado: 1. Comenzamos entonces a hacer una bola grande que achataremos en nuestra mano, haciendo una hondonada en el medio con uno de los pulgares para generar una especie de canasta. 2. Introducimos una cucharada colmada del relleno. 3. Vamos cerrando la masa lentamente hasta hacer una especie de bola que contenga el relleno en su interior. 4. Achatamos la base y del otro lado damos una forma redondeada o abombada. 5. Una vez terminada la pieza la colocamos en una bandeja antiadherente para horno o en una común engrasada y repetimos la operación hasta terminar. Obviamente que tendremos que cocinarlas en dos tandas si hacemos estas cantidades. 6. Las llevamos a un horno precalentado a una temperatura alta (unos 200°C) durante 20 a 25 minutos o cuando vean que las piezas están doradas. Salen con esas típicas grietas, riquísimas y listas para disfrutar!!! A mi me gusta partirlas al medio y rociarlas con un chorrito de jugo de limón y una salsa picante tipo Tabasco o similar.
