Omnia Oven Recipe - Easy Vegan Lemon Drizzle Cake Who doesn’t love a lemon drizzle cake? It’s a classic English cake that always goes down a treat when you bake it for family and friends. We love having lemon drizzle cake with a tart lemon syrup which is run through the middle of the cake - it makes it super lemony! You can also put on an additional lemon icing topping (which not only tastes good but makes it look prettier too!) but we tend to prefer it just with the syrup. The good news is that it’s so simple to bake - even using a vegan Omnia Oven recipe. The bad news is - it won’t last very long! Campervan Baking with an Omnia Stove Top Oven We cook and bake all our cakes and all our food which needs oven cooking in an Omnia oven. It’s a fantastic bit of kit that allows you to oven cook on the stove and so you don’t have to have a built in oven. How To Bake a Cake in an Omnia Oven It’s simple - you just put the cake mixture in the Omnia and then place on top of the hob. We just have 2 bits of advice for baking cakes in an Omnia oven: 1. Cook on a much lower flame than normal - otherwise your cake might get a burnt bum! 2. Use an Omnia silicone liner - It makes getting the cakes out much easier and are also much nicer to clean. How to Make a Lemon Drizzle Cake Vegan It’s easy - no egg and no milk! It really doesn’t need them to make this cake light and tangy just like a lemon drizzle cake should be! Vegan Lemon Drizzle Cake Ingredients Cake Ingredients 280g self-raising flour 200g white caster sugar (or golden caster sugar) 100ml vegetable oil 1 tsp baking powder 1 lemon zested and juiced 170ml of cold water Lemon syrup ingredients 2 tbs white sugar 1 lemon juiced Step by Step Method for Making a Vegan Lemon Drizzle Cake Cake Method 1. Grease the Omnia oven tin (or liner) with margarine. 2. Mix the flour, baking powder, sugar and lemon zest in a large mixing bowl. 3. Add the lemon juice, oil and 170ml of cold water and mix until smooth. 4. Pour into the Omnia oven and bake for approx 30 mins on a low flame until a skewer comes out clean. 5. Allow to cool for 10-15 minutes and transfer to a plate to cool fully. Lemon syrup method 6. Mix the sugar and lemon juice in a small bowl and heat up in a pan gently until the sugar crystals have dissolved. 7. Use a skewer to make small holes through the cake (don’t go all the way through) approx 1cm apart and pour the lemon syrup over the top of the holes. 5 Easy Campervan Cake Baking Recipes Firstly- How do you bake in a Camper Van? If you have a built in oven in your van then the answer is easy-just like in a house! If like us- you chose not to, then there is a very simple and cheap solution- an Omnia Oven. Yes I know we bang on about these a lot, but honestly- you can cook virtually anything you would normally cook in an oven in them….even cakes! How to Bake a Cake in an Omnia Oven It’s simple- you just put the cake mixture in the Omnia and then place on top of the hob. We just have 2 bits of advice for baking cakes in an omnia: 1. Our Top 5 Cakes Recipes Baked in the Van We thought we would share our top 5 cake recipes that have been simple and super tasty cooked in our campervan. As we are vegans they are vegan recipes but are easily made back into non-vegan if you prefer. We cook all ours with an Omnia but you could use a built in oven and just replace the omnia with a cake tin. Here it goes: Carrot and Pecan Cake Ingredients - 225ml vegetable oil - 200g plain flour - 1 tsp bicarbonate of soda - 275g light brown sugar (white also works) - 3 tsp egg replacer - 8 tbs water - 2 tsp ground cinnamon - 250g grated carrots - 100g pecans For the optional topping - 150g vegan cream cheese - 75g caster sugar - 50g vegan butter Method 1. Grate the carrots and chop the pecans into small pieces. Leave 5-6 whole for the topping 2. Add the vegetable oil, flour, bicarbonate of soda, sugar, egg replacer, water and cinnamon to a bowl and mix. 3. Add in the carrots and pecans 4. Place in the omnia on a low flame for 50-60 minutes. 5. Meanwhile mix the cream cheese, sugar and butter in a bowl. Whisk until all the lumps have gone and leave somewhere cool (A fridge ideally) 6. Once the cake has cooked (use a skewer to see if it comes out clean) remove from the Omnia and allow to cool 7. Once cooled spoon on the cream cheese and arrange whole pecans Coffee and Walnut Cake Ingredients - 225g vegetable oil - 100g walnuts roughly chopped - 125g dark brown sugar - 100g white sugar - 1 tsp baking powder - 225g plain flour - 2 tbs instant espresso dissolved in 1 tbs boiling water - 4 tsp egg replacer - 10 tbs water For the icing: - 250g icing sugar - 100g vegan butter or margarine - 1.5 tbsp instant coffee dissolved in boiling water Method 1. Grease the Omnia or liner (advised) 2. Mix the walnuts, brown and white sugar, baking powder and plain flour in a mixing bowl 3. Preheat the Omnia on a low flame 4. Make a well in the centre and add the vegetable oil, espresso, egg replacer and water and mix thoroughly until you have a smooth batter 5. Add the mixture to the omnia/liner and bake for 60 minutes or when a skewer comes out clean 6. Leave to cool for 10 minutes and then remove from the Omnia onto a plate or cake tin to cool fully 7. Meanwhile to make the icing- beat the icing sugar and butter until light and fluffy then add the dissolved coffee whisk and keep somewhere cool until the cake is ready for it to be spread on top. Sticky Ginger Cake (Adapted from The Domestic Gothess recipe ) Ingredients - 225g plain flour - 1 tsp baking powder - 1 tsp bicarbonate of soda - 2.5 tsp ground ginger - 1 tsp mixed spice - 80g caster sugar - 80ml sunflower oil - 100g golden syrup - 100g treacle - 180ml boiling water Method 1. Grease the omnia / liner (advised) and preheat the omnia on a low flame 2. Whisk together the flour, baking powder, bicarbonate of soda, ginger, mixed spice and caster sugar in a bowl 3. Add the golden syrup, treacle, sunflower oil and boiling water and whisk until smooth 4. Pour the mixture into the Omnia / liner and bake for approx. 25 mins or until the skewer comes out clean 5. Leave to cool in the Omnia and then flip out into a tin or a plate Original recipe on The Domestic Gothess website. Cinnamon Buns (Adapted from The Van Taste recipe) Ingredients - 350g plain flour - 200ml soya milk - 100g + 40g Margarine - 2 tbs + 1 tbs sugar - 1 tsp egg replacer - 2 tbs water - 1 tbs cinnamon - 1 tbs dry yeast - Pinch of salt Method 1. Grease the Omnia/liner in preparation 2. Melt 40g butter in a small bowl. Add the milk and whisk to combine. Add the dry yeast and let it rise for 10 minutes 3. After 10 minutes add the egg replacer, water, 2 tbsp of sugar and salt and mix 4. Add the flour slowly and knead the dough until it becomes soft. Let it rise for 1 hour in a warm place (In the van we cover the bowl with a tea towel and place in from of the heater vent to help it rise!) 5. Once risen, flour a worksurface and roll out the dough to a rectangular shape with an approx. thickness of 2cm. 6. Mix 100g warm butter with 1 tbs of sugar and the cinnamon and spread onto the dough. 7. Roll the dough into 1 long roll and cut into 3cm thick slices. 8. Place the slices next to each other in the Omnia and bake for 25 minutes on a low flame. Original recipe on The Van Taste website. Golden Syrup Cake Ingredients - 150g margarine - 64g caster sugar - 380g plain flour - 2 tsp bicarbonate of soda - Pinch of salt - 2 tsp baking powder - 600ml of golden syrup - 450ml boiling water Method 1. Grease the Omnia / liner (recommended) 2. Mix all the ingredients together in a large bowl until smooth (The mixture will be quite runny) 3. Add the mixture to the Omnia/liner on a low flame for 40-50 minutes until a skewer comes out clean 4. Allow to cool for 10-15 minutes then flip onto a bowl or cake tin 5. Rosemary and Garlic Bread Omnia Oven Recipe Whilst travelling in Europe we have found it surprisingly hard to find really nice bread at a reasonable cost. If you want to buy a semi decent loaf you need to spend in excess of 3 euros which when you consider the price of the ingredients if you made it yourself is pretty extortionate. We therefore tend to try and make our own bread whilst travelling abroad. The Omnia makes it incredibly easy and gives a really good bake if you treat it like cake (bake on a longer lower heat). One of our favourite bread recipes is rosemary and garlic bread - it goes with anything! We have it as toast in the morning, as sandwich bread for lunch and you can even turn it into full on garlic bread by adding in a bit of garlic butter and re-heating. It takes about 15 minutes to prepare and knead and then around 1 hour to rise. The bake time is approx 35-40 minutes so all in all - in around 2 hours you have a delicious load of bread which costs a fraction of the cost of shop bought bread and tastes so much better! The best bit is it makes the van smell absolutely amazing whilst its baking! Rosemary and Garlic Bread Ingredients - 310g plain flour - 210 ml of warm water - 1.5 tsp of quick yeast - 2 tsp white sugar - 3 tbs olive oil (extra virgin ideally) - 1 tsp salt - 1 to 2 tbs of dried rosemary (use one to start depending on preference) - 2 tbs of garlic and herb salt mix - Black pepper - Sea salt to taste Rosemary Garlic Bread Method 1. In a large mixing bowl mix the quick yeast, sugar, salt and warm water. Add the olive oil and flour and mix with a large spoon at first and then once formed hand knead for 10 minutes. 2. Add the rosemary, garlic and herb mix and a good grind of pepper and knead for a further 5 minutes. The dough should come together well now and not be too sticky. If it is sticking to the bowl then keep adding a small amount of flour until it forms well. 3. Once well kneaded and formed, oil the mixing bowl and rub a little around the dough to prevent it sticking. Cover the bowl with cling film or tea towel and place in a warm draft free place. In a van/boat this could be in the window if sunny or we often place it next to the heater. Leave for approx 1 hour and it should double in size. If it doesn't put it somewhere warmer and leave it for up to 2 hours. 4. Rub a little oil around the Omnia tin or liner. Once the dough has risen roll loosely into an Omnia doughnut shape and place into the Omnia pushing it to the edges and join together at the ends. 5. Brush the top of the bread with a little olive oil and sprinkle on a good helping of dry rosemary, garlic mix and sea salt. Bake on a low flame for 35-40 minutes until the top is starting to brown a little but make sure you don't over bake and burn the bottom. Enjoy! The great thing about this Omnia Oven recipe is it actually tastes and cooks better in an Omnia Oven than in a standard at home oven. I made it in a house recently and it wasn't nearly as good! We like a slightly crispy base which the Omnia Oven does perfectly. How to Make Macaroni Cheese in an Omnia Oven Ingredients - 150g macaroni - 1 vegetable stock cube - 10ml truffle oil - 120g grated cheese (or vegan cheese - we tend to use a cheddar variety) - 30g panko breadcrumbs - 2 tsp English mustard - 200g creme fraiche (or vegan crème fraiche) - 1 tbs Marmite - 1 tbs B12 Yeast flakes - Handful of pumpkin seeds Method 1. Place macaroni in a saucepan and cover in cold water with approx 1” water overlap 2. Boil until almost all the water has been absorbed 3. Add in the stock cube to the remaining water in the pan and mix 4. Add in crème fraiche, cheese, mustard, marmite and yeast flakes and give it a good stir until combined. 5. Add macaroni mixture to the Omnia Oven (ideally use a liner as it saves cleaning!) 6. Sprinkle the panko breadcrumbs and pumpkin seeds over the top. 7. Place on the hob on a medium heat for approx. 20-25 mins (depending on if you like a crispy base!) 8. Drizzle truffle oil over the top and serve. Enjoy! How to Make Macaroni Cheese in an Omnia Oven Ingredients - 150g macaroni - 1 vegetable stock cube - 10ml truffle oil - 120g grated cheese (or vegan cheese - we tend to use a cheddar variety) - 30g panko breadcrumbs - 2 tsp English mustard - 200g creme fraiche (or vegan crème fraiche) - 1 tbs Marmite - 1 tbs B12 Yeast flakes - Handful of pumpkin seeds Method 1. Place macaroni in a saucepan and cover in cold water with approx 1” water overlap 2. Boil until almost all the water has been absorbed 3. Add in the stock cube to the remaining water in the pan and mix 4. Add in crème fraiche, cheese, mustard, marmite and yeast flakes and give it a good stir until combined. 5. Add macaroni mixture to the Omnia Oven (ideally use a liner as it saves cleaning!) 6. Sprinkle the panko breadcrumbs and pumpkin seeds over the top. 7. Place on the hob on a medium heat for approx. 20-25 mins (depending on if you like a crispy base!) 8. Drizzle truffle oil over the top and serve. Enjoy! Omnia Oven Recipe - Chocolate Marble Cake This show stopper cake is a feast for the eyes and always creates an impact when presented to family and friends. Our chocolate marble cake Omnia Oven recipe combines chocolate cake and vanilla cake which is great for the indecisive who can't pick between the two and it tastes amazing too! A chocolate marble cake is surprisingly easy to make and is also super fun - it's a great family friendly Omnia recipe which is great for kids (or big kids!) to help with. We have created the recipe below so it can be made vegan or not - whichever suits you best. Campervan Baking with an Omnia Stove Top Oven We cook and bake all our cakes and all our food which needs oven cooking in an Omnia oven. It’s a fantastic bit of kit that allows you to oven cook on the stove and so you don’t have to have a built in oven. How To Bake a Cake in an Omnia Oven It’s simple - you just put the cake mixture in the Omnia and then place on top of the hob. We just have 2 bits of advice for baking cakes in an Omnia oven: 1. Cook on a much lower flame than normal - otherwise your cake might get a burnt bum! 2. Use an Omnia silicone liner - It makes getting the cakes out much easier and are also much nicer to clean. How to Make a Chocolate Marble Cake Vegan It’s easy - we use egg replacer, vegan margarine (flora buttery) and soya milk. Below we provide vegan and non vegan ingredients to create this recipe. Chocolate Marble Cake Ingredients Cake Ingredients 225g self-raising flour 225g white caster sugar 225g butter (or vegan margarine) 4 eggs (or 4 tsp of egg replacer and 8 tbs water) 3 tbs milk (or soya milk) 1 tsp vanilla extract 2 tbs of cocoa powder Step by Step Method for Making a Chocolate Marble Cake Cake Method 1. Grease the Omnia oven tin (or liner) with margarine. 2. Beat together the butter and caster sugar. Then add 4 eggs (or egg replacer and water) little by little mixing well. 3. Fold in the self raising flour, 3 tbs milk (or soya milk) and vanilla extract until your mixture is smooth. 4. Put half of the mixture in a separate bowl and stir in the cocoa powder into one of the bowls. 5. Using 2 separate spoons use them to place in a spoonful of each mixture into the Omnia Oven one at a time. When all the mixture is in the Omnia use a skewer to swirl around the mixture a few times 6. Bake for approx 50 mins on a low flame until a skewer comes out clean. Allow to cool for 10-15 minutes and transfer to a plate to cool fully. There you have it - an impressive looking chocolate marble cake that tastes divine! Enjoy! No-Knead bread is so easy -- and delicious! And yes, you can make it without a conventional oven. You just have to remember to start it far enough in advance!

Rosemary and Garlic Bread Omnia Oven Recipe Whilst travelling in Europe we have found it surprisingly hard to find really nice bread at a reasonable cost. If you want to buy a semi decent loaf you need to spend in excess of 3 euros which when you consider the price of the ingredients if you made it yourself is pretty extortionate. We therefore tend to try and make our own bread whilst travelling abroad. The Omnia makes it incredibly easy and gives a really good bake if you treat it like cake (bake on a longer lower heat). One of our favourite bread recipes is rosemary and garlic bread - it goes with anything! We have it as toast in the morning, as sandwich bread for lunch and you can even turn it into full on garlic bread by adding in a bit of garlic butter and re-heating. It takes about 15 minutes to prepare and knead and then around 1 hour to rise. The bake time is approx 35-40 minutes so all in all - in around 2 hours you have a delicious load of bread which costs a fraction of the cost of shop bought bread and tastes so much better! The best bit is it makes the van smell absolutely amazing whilst its baking! Rosemary and Garlic Bread Ingredients - 310g plain flour - 210 ml of warm water - 1.5 tsp of quick yeast - 2 tsp white sugar - 3 tbs olive oil (extra virgin ideally) - 1 tsp salt - 1 to 2 tbs of dried rosemary (use one to start depending on preference) - 2 tbs of garlic and herb salt mix - Black pepper - Sea salt to taste Rosemary Garlic Bread Method 1. In a large mixing bowl mix the quick yeast, sugar, salt and warm water. Add the olive oil and flour and mix with a large spoon at first and then once formed hand knead for 10 minutes. 2. Add the rosemary, garlic and herb mix and a good grind of pepper and knead for a further 5 minutes. The dough should come together well now and not be too sticky. If it is sticking to the bowl then keep adding a small amount of flour until it forms well. 3. Once well kneaded and formed, oil the mixing bowl and rub a little around the dough to prevent it sticking. Cover the bowl with cling film or tea towel and place in a warm draft free place. In a van/boat this could be in the window if sunny or we often place it next to the heater. Leave for approx 1 hour and it should double in size. If it doesn't put it somewhere warmer and leave it for up to 2 hours. 4. Rub a little oil around the Omnia tin or liner. Once the dough has risen roll loosely into an Omnia doughnut shape and place into the Omnia pushing it to the edges and join together at the ends. 5. Brush the top of the bread with a little olive oil and sprinkle on a good helping of dry rosemary, garlic mix and sea salt. Bake on a low flame for 35-40 minutes until the top is starting to brown a little but make sure you don't over bake and burn the bottom. Enjoy! Omnia Oven Recipe - Vegan Lasagna Lasagna is one of those good old pub grub favourites - it was certainly one I always had as a treat after a day out in the mountains. Believe it or not - it's a recipe that I have never actually tried to make myself in a standard kitchen as it looked complicated and time consuming. I had also heard it was difficult to get the pasta to cook through well. Well - this certainly does not seem the case cooking it in an Omnia oven! It's actually surprisingly simple to make and my goodness does it taste really good! It all cooks really well on the stove and so far I've not had a problem with the pasta not being cooked through. Before attempting to cook a lasagna in the van I had the added complication of trying to make the recipe vegan. This, as it turns out with most recipes, was not actually that difficult. I decided the easiest way to transform it was to use soya mince and mix that with a whole heap of delicious vegetables. As for the white sauce - all I needed to do was to make it using soya milk. Here is our vegan lasagna recipe which we cook on the stove in an Omnia. If you have a standard oven you can just use an oven proof dish instead of the Omnia tin: Vegan Lasagna Ingredients (Serves 4) - 1 large onion (diced) - 1 carrot (diced) - 1 tin chopped tomatos - 1 red pepper (diced) - 150g mushrooms (White or chestnut) (thinly sliced) - 2 garlic cloves crushed - 75g lentils (dried or tinned) - 100g of soya mince (pre soaked in cold water for 15 mins) - 2 tsp of oregano or Italian seasoning - 2 tbs of tomato paste - 2 tsp soy sauce - 1 vegetable stock cube - Salt and pepper to taste - 1 tbs olive oil - 8 dried lasagna sheets - 50g grated vegan cheese (Mature works best) White Sauce Ingredients - 100g plain flour - 2 tbsp olive oil - 800ml of Soya milk (or almond/oat milk) - 3 tbs B12 yeast flakes - 1/4 tsp ground nutmeg - Salt and pepper Vegan Lasagna Method 1. Heat olive oil in a large saucepan on a medium heat and fry the onion for 5 minutes until softened. Add the carrot, mushrooms, pepper and soya mince and cook for a further 10 minutes stirring often. 2. Add the garlic and cook for 30 seconds then add the lentils, tinned tomatoes, tomato paste, oregano, crumbled stock cube and then refill the tin of tomatoes with water and add that to the mixture. Turn the heat to low and simmer for 15 minutes adding the soy sauce in about half way through. Stir every now and then to prevent sticking. 3. Whilst the ragu is simmering you can make the white sauce. Heat the oil in a saucepan and then add the flour stirring constantly for 60 seconds. Then stir in the milk, B12 flakes, nutmeg and season with salt and pepper. 4. Keep the white sauce on a low heat and start to simmer whilst whisking constantly to prevent any lumps forming. Whisk for 5 minutes until it's thickened and is smooth. 5. Once the ragu has simmered and thickened place 1/3 of the mixture in the base of the Omnia tin (ideally with a liner). Cover with single layer of lasagne sheets (you will need to break them up to make them fit into the Omnia shaped pan - it's like a fun jigsaw!). Then add another 1/3 of the ragu and another layer of lasagna. 6. Pour over half the white sauce over the 2nd lasagna layer and then top with the final 1/3 of the ragu mixture. Place a final layer of lasagna on and then a good helping of the white sauce (don't worry if you have some left - it's nice reheated alongside the lasagna when served!). Finally sprinkle the vegan cheese over the top. 7. Bake in the Omnia for 30-35 minutes on a medium flame until the topping has nicely browned. Omnia Oven Recipe Veggie Shepherds Pie This classic English hearty dish is perfect for cooking in the Omnia Oven. We have taken a traditional old classic and turned it into a tasty, healthy veggie version which looks and tastes great. It also goes a long way and we always end up getting 2 nights dinners out of it. Instead of using meat as you would traditionally we use a lentil and vegetable base and combine it with a tasty homemade sauce which includes soy sauce and balsamic vinegar with a variety of herbs. We make it super moorish by topping the base with a sweet potato and white potato mix with breadcrumbs and cheese on top. When baked on the stove in an Omnia Oven it comes out super rich and the top nice and crispy. We have created the recipe below so it can be adapted for vegans too (which is the version we use). How to Make a Shepherds Pie Vegan It's really simple - you substitute the meat for lentils and mix with healthy veggies. You could also use vegetarian mince meat if you prefer - we just love the lentil veggie version and get's us more of our 5 a day! Veggie Shepherds Pie Ingredients Tip- we usually double the below ingredients so it lasts 2 nights and you don’t have 1/2 tins of stuff left over! Ingredients 150g white potatoes 150g sweet potatoes 10g margarine 1 red onion 1 carrot 1 tsp garlic paste 100g chestnut mushrooms 3 tbs tomato paste 1 vegetable stock cube (to make 50ml stock) ½ tin lentils ½ tin chickpeas 1 tbs soy sauce 2 tsp balsamic vinegar 1 tsp dried rosemary 1 tsp dried thyme 30g panko breadcrumbs Step by Step Method for Making a Veggie Shepherds Pie Method 1. Peel and chop all potatoes into roughly 2cm chunks. Place the white potatoes in a pan of cold salted water and bring to the boil. Simmer for 10-15 minutes 2. Add the sweet potatoes in after 5 minutes 3. Drain and then add the margarine in with a pinch of salt and black pepper. Mash until smooth and set aside 4. Peel and finely slice the onion and the carrots. Fry with a splash of oil for 10 minutes until softened on a medium heat 5. Meanwhile roughly chop the mushrooms and then add to the pan with the garlic paste, soy sauce, balsamic vinegar and tomato paste. Cook for a further 10 minutes 6. Add into the vegetable stock (50 ml), lentils and chickpeas (with the juice) and allow to simmer for 5-10 minutes 7. Stir in the rosemary and thyme and then add into the Omnia 8. Spread the mash over the top and sprinkle the panko breadcrumbs on top 9.
