Jamie Oliver farcit sa dinde de Noël (6 à 8 kilos) avec une farce faite maison à base d'une viande de porc qu'on hache soi-même : Ingrédients : 2 grands oignons 1 kg de viande porc émincé au couteau 50 g de pain rassis 200 g de marrons cuits un bouquet de sauge, feuilles émincées 3 tranches de lard fumé coupées grossièrement poivre blanc noix de muscade râpé 1 citron 1 orange ou clémentine Préparation : Préchauffer le four à 190 ° Émincer l'oignon dans le robot cuisine Ajouter à la viande de porc Réduire le pain rassis en grumeaux Ajouter au pain les marrons réduits en morceaux Mettre dans le robot le mélange de viande de porc avec les feuille de sauge, le lard, une càc de poivre blanc et une grosse pincée de sel Ajouter une càc de noix de muscade et le zeste d'un demi citron râpé ainsi qu'un peu de zeste râpé d'orange ou clémentine Pulser le mélange de viande, il doit rester quelques morceaux Ajouter ensuite le mélange de viande dans le saladier avec les marrons et le pain rassis. Bien mélanger. Utiliser la moitié pour farcir la dinde et mettre l'autre moitié dans un plat à gratin. Cuire au four pendant 50 à 60 minutes. J'avais utilisé un plat trop grand par rapport à la quantité et la viande avait un peu séché. Mieux vaut donc prévoir un plat d'une taille qui permette d'avoir une couche assez épaisse de viande. Je ne trouve pas nécessaire de préparer tant de farce et on pourrait donc se contenter de la moitié des ingrédients, juste pour farcir la dinde.
