Last year I tried to make candy bars, just plain melt and pour ones but it did not turn out as expected. I did not want to give up because I have seen many people do it and it looks so simple to make. I was wondering where I went wrong and finally I guessed it may be due to microwaving of chocolate. So, this year, with an additional twist of personalization I am going to show how to make personalised candy bars with almond/caramel filling (Yum! Yum!). Lets get started. Supplies : Chocolate chips (I used Ghirardelli Milk chocolate chips) Double boiler ( I used a pan and snuggly fitting bowl on top) Chocolate mold Almonds Caramels (I used Werther's original Chewy caramel) A tsp of milk Spatula Toothpick A new paint brush Edible color mist Stencils of your choice Step 1: Fill the bottom pan of the double boiler with water and bring it boil. Switch off the flame. Place the top pan and pour the required amount of chocolate chips. Use spatula and slowly stir them around until the chocolate is melted smooth and shiny. Step 2: Now fill the mold with a thin layer of chocolate and use the paint brush to paint the chocolate on the corners of the mold to create a bowl for almonds or caramel filling. If you are doing plain chocolate bars, you can just fill the mold with desired thickness of the chocolate and follow the next step. Once you are done, bang the mold on the counter top or table(Wherever you are working) several times to release the air bubbles formed. Use a tooth pick to burst any bubbles and go around the corners of the mold to ensure there are no air bubbles. Allow the chocolate layer to freeze. Step 3: Now prepare the almonds and caramel filling. To roast the almonds , Take a cup of almonds in a baking tray.Preheat the oven to 350 F and place the tray for 10 mins. Take the almonds out and give it a mix and put it inside the oven for 10 more minutes. You will now start to feel the smell of roasted almonds. You can take it out at this moment or allow it for 5 more minutes if you want. But be careful not to burn. Once it is cooled down, use a knife to chop them into pieces. Don't use blender to break the almonds into pieces . It will not work (Believe me! May be you will get almond flour ;) ). For the caramel filling, take the 6 to 7 pieces of caramel (For 2 candy bars) and add a tsp of milk to it and microwave it in 30 seconds intervals. It took only 30 seconds for me but it may vary depending on your microwave. Mix it well for the goey caramel filling. I made a mistake here, I added too much of milk to melt caramel so I ended up with the thin consistency of caramel which started to come out of the chocolate bars. So take care while you do this. Add more milk(I mean more than a tsp) only if you want. Step 4 : Take the mold out of the fridge and now it is time to fill the almonds and caramel. I decided to fill two candy bars with almonds. One with caramel and one with a combination of both. I went little over board while filling the caramel. As I said in the earlier step, the consistency of the caramel was runny and also I filled it till the edges. So be careful while you do this, don't fill it till the edges.The filling should always be within the chocolate bowl to avoid caramel explosion later (You know what I mean, right? ). Step 5: Now melt another batch of chocolate chips, and pour it on the top of the candy bars to seal the filling. Step 6: Allow the candy bars to set in the fridge and once it is done. Remove them from the mold. Step 7: Now comes the fun part of decorating the candy bars. Take the stencil and place it on the top of the candy bar, cover the remaining candy bars with the paper towel. Spray the edible color mist (I used wilton gold color mist) in a swing motion for the design to transfer on the candy bars. I created my stencils with electronic die cutting machine. You can make them if you have one or use a craft knife and cardstock to create your own. I also used a snowflake punch to create stencil for two candy bars. I used the snowflakes itself for the hexagon one and the negative space as a template for the rectangle one.(Isn't it amazing?) Allow it to dry for sometime and then wrap them in plastic wrap to gift it to your family and friends. What do you think? These personalized candy bars make a perfect place card for your holiday table. If you try these, what filling you prefer? Also make sure you select good quality of chocolate chips to make your candy bars. I would say I liked the Ghirardelli milk chocolate best(Not sponsored) compared to all the previous chocolate chips I have used. If you haven't tried those for any reason, I would say do try them. Homemade PESTO From Home Grown BASIL I so enjoy basil season! Harvesting this fragrant herb will send glorious clouds of aroma into your neighbor's backyards. If you are not familiar with pesto - it's kind of like a basil spread. The traditional Italian pesto includes pine nuts but due to the extremely high price of this nut I have substituted that for walnuts (I actually prefer walnuts to pine nuts). I freeze the many batches of pesto that I make each summer. NOTE - I do NOT add the garlic until actually making a recipe (I do NOT freeze the pest with garlic included - the garlic becomes overpowering when frozen). I use pesto to make Pesto Garlic Bread or Pesto Pasta - both are keeper recipes. Printable Recipe PESTO Recipe 8 cups basil leaves 1 1/2 cups grated parmesan cheese 1 cup walnuts 4 tablespoons olive oil Harvest your basil. Pick off only the choicest of leaves (if the leaf is half eaten then I compost it - I don't want to be eating bug saliva - lol). Rinse & drain these choice leaves (see picture above). Make sure that you get all the garden grit off the leaves (there's nothing worse than biting into sand/dirt). In a food processor, add all ingredients (see picture below). Pulse or process according to your Food Processor manual until the pesto resembles the picture below. I fill glass ramekins with 3/4 to 1 cup pesto (packing it down tightly into the ramekin) (see picture below). Continue filling as many ramekins as you have pest. Cover each ramekin (I have a fitted lid - you might want to use a canning jar if your ramekins do not have fitted lids). Freeze the pesto filled ramekins. Once they are fully frozen I pop the pesto out of the ramekin and then transfer the "pesto puck" to a ziplock baggie (or I use my vaccuum packer). Freeze until winter and enjoy a bit of August in February! Or use the pesto now to make one of the recipes at the end of this post. Garlic Pesto Bread 1 loaf Italian bread 1 cup of pesto (or 1 thawed pesto puck) 1 to 2 garlic cloves (remove the skin) Foil (large piece) Process the garlic using a garlic press and stir this into the thawed pesto. Cut the Italian bread in half lengthwise (see picture below) Spread the pesto on the inner bottom part of the bread and spread butter on the inner top portion of the bread (see picture below) Place each half of the bread on the foil - (you can either do open faced for crispier bread or place the two pieces together and wrap the foil around the bread). Bake in a preheated 350 degree oven for about 10 minutes or until desired color or doneness is achieved. Slice & ENJOY! Pesto Pasta 1/2 package of bow tie pasta 1 cup of pesto (or 1 thawed pesto puck) 1 garlic clove (remove the skin) Follow the directions on the package and cook the pasta to "al dente". Drain and immediately add the totally thawed pesto onto the hot pasta. Quickly stir until the pasta is covered (you might need to add a little butter or olive oil to make the pesto evenly dispersed). Serve while hot & ENJOY! I am not a crust girl, never have been, never will be! However, I am an egg and cheese and veggies girl so a Crustless Quiche had my name all over it and boy did this one ever delight the taste buds! Love serving up a delightful quiche with some fresh berries and I have been know to add in a mimosa or two as well. Love how pretty it is with all the antioxidant rich spinach, red pepper, mushrooms and onions. Yum CRUSTLESS SPINACH QUICHE INGREDIENTS ½ cup onion, chopped 1 cup fresh, sliced mushrooms ¼ cup red pepper, chopped, optional 1 tablespoon olive oil 1 (10 oz) package frozen, chopped spinach, thawed and drained ½ cup finely chopped ham 6 eggs 3 cups Monterey jack cheese (*note, the last time I made this I only used 1 1/2 cup cheese and used 2% Colby Jack....was still just as good and 1/2 the calories) DIRECTIONS Preheat oven to 350°. In a large skillet, sauté onion and mushrooms and if desired, red pepper in oil until tender. Add spinach and ham; cook and stir until the excess moisture is evaporated. Cool slightly. Beat eggs; add cheese and mix well. Stir in spinach mixture and pepper; blend well. Spread evenly into a greased 9-in. pie plate or quiche dish. Bake for 40-45 minutes or until a knife inserted in center comes out clean. Yield: 8 servings. Before baking Nice and golden, try not to over back so it is light and fluffy. This is what I'll make you for breakfast when you come to visit! And maybe a sweet treat too! HAPPY TASTY TUESDAY FRIENDS!! "Ma, do you know that great white sharks can smell blood in the water up to three miles away?" exclaimed Bo while looking at the Shark sign "And ooh ma.. Look at that tiny jaw. With sharp teeth! Touch it!" Said Obi while brushing her tiny fingers to the replica of piranhas' powerful jaws. Bo et Obi happily bombarded me with questions and answer them themselves while we were walking along the Ocean view room at New York Aquarium, Coney Island, that day. #summerisON! And how we all look forward to have a lovely summer. Here in NYC, kids have been enjoying their summer break since June 26. And since we have no summer classes this time, my hubby and I are working on making sure that the kids, and their parents as well :), have an enjoyable, yet rewarding summer break. Not that easy though..particularly as I still have to work full time and the UN, somehow, is still packed with meetings. Nevertheless, whenever we have day-off and weekends, we try to go out with the kids. During the Lebaran week, we managed to go to the Coney Island. Well, first destination here is the New York Aquarium. Have you been here before? New York Aquarium is part of the Wildlife Conservation Society (WCS). As and ID NYC holder, my hubby and I can get 1-year free membership of the WCS which includes, among others, the New York Aquarium, Bronx Zoo, Central Park Zoo, Prospect Park Zoo and Queens Zoo. So can visit those places for free. Cool, right. As for the kids, as they do not have the ID yet, we still have to pay for their admission. It usually costs $12 per person older than 2 years, but that day it was only $10. New York Aquarium is undergoing a major change after the devastating storm Sandy. They are rebuilding and transforming this place but we still have a lot to enjoy. Coming from Indonesia, the largest archipelagic state, we pretty much miss the ocean and all its interesting creatures. And at this point of time, New York Aquarium is a prefect place to see those beautiful underwater world and spend some quality time with the kids, while at the same time getting closer and getting to know more about nature's wonder. There are a few places you can visit and enjoy with your kids. First, the Glover's Reef. This is part of the Ocean View Room, our first stop right after entering the aquarium. And kids (as well as adults) will surely enjoy those great variety of fish and ocean critters from Atlantic, Pacific, Caribbean Oceans and more. Nemo or clown fish are abundant, so is Dory :). Not to mention mantarays and piranhas. enjoy... I really love this part as we get to see different types of fish from many corners of the world. My kids got so excited when they saw them so close, found out that piranhas are small yet have super strong jaws. mantaray, electric blue and more exotic fish For me who constantly missing the amazing underwater world of Indonesia, this spot is like a tiny home-sweet-home. I let myself immersed in those calming blue water and colorful schools of fish swimming freely right in front of my eyes. I wish I could join them. the real 'aquarium' in Bunaken, Manado, Indonesia. Then we also visit the Conservation Hall. And outside the Ocean view room, we have 2 sea cliffs, for walrus and penguins. Love to see those cute penguins, critters in tuxedo :). And they make cute noises as well. What attracts most of my kids' attention is of course the Sharks temporary home. Bo has been smithen by sharks since he was on the 3rd grade. He has a lot of book about sharks and quite knowledgable about this amazing creatures. No wonder he was so happily flipped to see giants sharks in the nearby tank, together with giant mantarays. the sharks behind the glass... Before heading home, we watched the show at Aquatheater. It was so much fun indeed. A 30-minute show with two intelligent sea lions who demonstrated great talents, including dancing, counting and mimicking. Super fun! Bo et Obi really love the show. up close and personal :) You can also enjoy the animal feedings, scheduled at 10.30, 11.45, 1.30, 2.45, and 3.50 PM near the sea cliffs. We missed it because we wanted to see the aquatheater first. They also have 4-D theater featuring Spongebob Squarepants movie. I guess we have to go back here to watch it :). And don't forget to grab some lovely souvenirs from the aquarium. This way we can support the the NYAquarium project of rebuilding and transforming this oldest running aquarium in the US. So, what are you waiting for? Visit New York Aquarium, Coney Island and have a fantastic time with your loved ones. We pretty much sure will go back here again :).
