Mafghoussa means “squashed” in Arabic, and that’s because the vegetables are squashed into cold salads once they are roasted. There are different versions of mafghoussa: some are made with tomatoes and laban jameed (salted and dried yoghurt), some are made with olive oil, as I have done here. The beauty of mafghoussa is that it’s a zero-waste recipe. There was a time, years ago, when this was on my table pretty much whenever I had friends over for a lazy Saturday lunch. And I love it still. It’s simple and undemanding to make, and can equally offer summer sprightliness or winter comfort, and in summer you might certainly consider scattering over basil on serving, along with the parsley. The sauce itself (rather like the eggs in a carbonara) is not actually cooked, but warmed through as it’s tossed fragrantly with the hot pasta. This is what I make for my children’s birthday celebrations, for farewell suppers to send them off before they go away, and for the dinners to welcome them back when they come home again. It’s our family take on a traditional lasagne, though I’m not sure Italians would exactly welcome my deviations from the classical recipe. This is not the place for in-depth social history, unless you take the view — as I do — that all food is social history, but I do need to provide a bit of provenance. Once upon a time there was Biba, an ill-lit but fabulous boutique, shoplifters' paradise, at the top of Kensington High Street. It moved, triumphantly, down the road to the old Derry and Tom's building, four or five huge floors of it, and on the fourth, or fifth, I can't remember, was its restaurant, the Rainbow Room, where my mother took me for treats when I was a child, while she kitted herself out in suede boots, maxi-coats and mini-dresses. It’s important to use romano (long) peppers here as the skins aren’t as tough as on bell peppers.
