Laat inkoken met kaneel, sinaasappel-en citroenzeste, limoenblad. Laat de pectine goed inkoken. Zeef de bouillon over het vers fruit en laat marineren.Maak de meringue:Kook het water met de 140 g suiker tot 119°C - 121°C. Klop ondertussen het eiwit op tot een schuimige massa en voeg er vervolgens zeer geleidelijk de 60 g suiker aan toe.Voeg het suikerwater, dat op temperatuur is straalgewijs aan de draaiende eiwitten toe en klop koud op tot een stevige glanzende massa. Vul er een spuitzak met een ronde spuitmond van 1/2 cm mee.Serveren:Strooi een laagje suiker op de crème bruléé en karameliseer met de brander. Werk af met de vruchtencompote. Spuit de meringue in toefjes ertussen en kleur even met de brander. Garneer met fijngesneden rood fruit en enkele blaadjes Oost-Indische kers.

Maak de vulling:Week de gelatineblaadjes. Klop de eidooiers los met de fijne suiker tot een lichtgele massa. Breng je room samen met de zaadjes van een vanillestok (+ de stok) aan de kook. Voeg 1/3 toe aan je eimengsel. Doe dit op zijn beurt terug in de pan en laat indikken tot een dikkere custardsaus (het kan nooit zo dik worden als pudding, omdat we geen maïzena hebben toegevoegd). Voeg je geweekte gelatineblaadjes toe en meng met een garde. Giet het mengsel in je afgebakken, afgekoelde taartbodem en plaats minstens 3 uur in de koelkast. Verdeel een suikerlaagje over de crème brûléetaart en gebruik een klein gasbrandertje om de suiker te karamelliseren. Serveer best onmiddellijk wanneer je suikerlaagje krokant en lichtjes warm is.
