Vanilla custard slice, using filo pastry and covered in syrup - it is a bit fiddly, but absolutely delicious. I was given the recipe by the sister of a Greek friend of mine, it is called galaktoboureko.
Maqluba is a layered dish that is served by flipping upside down to reveal layers of vegetables (commonly eggplant, potato and cauliflower), meat and rice. It's so flavourful because everything cooks together in one pot. It's also highly customizable and made across many middle eastern countries. If you love Arabic food... this is the dish to try!
Need a quick weeknight dinner? This pasta napolitana can be on the table in less than 30 minutes. With minimal ingredients, al dente pasta, smothered in a classic Italian pasta sauce is great for meatless Mondays too.

Is there anything more wonderful than hot, homemade bread, fresh out of the oven? This wholemeal spelt challah recipe is an old favourite of mine – it looks beautiful and tastes even better . . . crusty on the outside, soft on the inside. Challah is a traditional Jewish braided bread, but you can make the dough […]

There are times in your life when you need to pull out all the stops, set up a special table, make an extraordinary tasty meal and just twirl some caramel strands around pretty mousse cakes. When crap hits the fan outside of my comprehension I just try to deal with it the best way I…
While this started off as a little something to pick at over drinks when friends came over, it has long since escaped those confines in my house, for it makes a rather lovely lunch (or indeed supper) in the normal run of things. Of course there’s nothing to stop you just popping each plumptious patty into your mouth just as it is, but I like to wrap mine in a crisp lettuce leaf, like a juicy edible parcel. And there is nothing to stop you wrapping them in warmed flatbread, pitta, a couple of pieces of bread or a bun along with anything else you’d like; and do check out the Lamb Patties and Fried Chicken Sandwich for inspiration! You may need to be rather brutal with the lettuce as you tear the leaves off to provide the edible wrappers for the patties, so I suggest you need one to two icebergs. If you want to perk the leaves up a little, making sure they curve into appropriate respositories for later, leave them in a big bowlful of very cold water (throw in ice cubes too) for 20 minutes or so, or plunge them in before you make the patties, then make sure you drain them well before piling them up on their plate.

Vegan baklava cigars are an impressive yet rather quick to make dessert. They are refined sugar free and are way healthier than the non-vegan version.
This Yogurt Mousse with Honey and Fresh Figs recipe balances a sweet and slightly tangy, airy mousse with fresh sweet figs.
This recipe makes enough to serve two and can be doubled. Increasing it beyond that might prove troublesome and lead to unwelcome results. Instead, I would create multiple batches if needed. The sauce holds very well at room temperature and will remain warm and spoonable for several minutes. If you prefer a bit of spice in your hollandaise, you can add a pinch of cayenne pepper or a bit of your favorite hot sauce with the salt and pepper.
The lone-dweller, in need of the balm that only a freshly baked biscuit can provide, is faced with a most unsatisfactory choice: do without or make a batch big enough to keep a huge hungry household happy. I had to put that right, and not just out of altruism, you understand. To this end, I have created a cookie recipe that answers my every requirement: deeply chocolatey, sweet but not too sweet, and sprinkled with sea salt flakes. They are the work of an easy moment, requiring no more than a couple of bowls, a wooden spoon and a spot of stirring. And while I urge you to eat one — if such urging is even necessary — when it's still warm, so that it's crisp around the edges, its centre tender and shortbready and gloriously gooey with nuggets of molten chocolate, you can for a contrating kind of eating enjoyment leave the other until the next day (but no longer), when it will be slightly sandy and softly chewy. But these are big old biscuits so, if you find yourself in company — and a generous mood — you can graciously offer one of them without feeling short-changed. One of my favourite ways to enjoy dumplings is by either steaming or boiling these and finishing it off with what I like to call the best dumpling sauce - with the perfect balance of savoury, heat, bit of sweetness and acidity. Let’s not forget the aromatics that really take it up a notch!
This is a great one pot meal and we usually just serve the slow cooker moussaka with a simple salad although if you love your meals to be carb heavy you could serve it with chips or wedges.
Pan de Coco, literally “coconut bread” is a bread usually served as a midday or mid-afternoon snack or as a breakfast bread in the Philippines. Best served and eaten while it is still freshly-baked.
I've long been tinkering about with a bottle of Bailey's, seeing how it could best be called upon in the kitchen, and I think, with this, I've found it. An Italian friend of mine, who makes a killer tiramisu herself, was an instant convert. I was relieved: the Italians generally are conservative about their food, which goes some way to explaining the longevity of their cherished culinary traditions. But this only sounds like some sort of joke — "Did you hear the one about the Irishman and the Italian...?" — and in reality is an elegantly buff-tinted, creamy-toned variant of the punchy, if comfortably cliched, original.
