Okinawan Shoyu Pork is the local Hawaii version of Okinawan dish called Rafute. It's basically braised pork belly! This dish is saucy, sweet (thanks to mirin and brown sugar) and savory (hello, soy sauce), and really good with a big bowl of rice.

I actually posted this by mistake. Supposed to be for tomorrow but some people already read it so you get two posts for today. LOL! You can't go wrong with melt in da mouth pork belly, yah! Wendell got the recipe for this dish from I Love Hawaiian Food Recipes site. 1½ pounds pork belly ½ cup sake ⅓ cup shoyu (soy sauce) 1-inch ginger, peeled and crushed ½ cup sugar ½ cup mirin Green onions, garnish (optional) In a large pot add pork belly and cover with water. Bring to a rolling boil and turn heat down and simmer for 10 minutes. This is to remove excess fat. Drain and rinse pork, then cut into 1 to 1½-inch pieces. In a large pot, add sake, shoyu and ginger then bring to a boil. Add pork pieces to mixture, cover and simmer for about an hour. Turning pieces 3 to 4 times throughout the hour. This will evenly glaze pork. Mix together sugar and mirin and stir into pork pieces. Cook for another 45 minutes uncovered until pork is soft and evenly glazed.
Hamburger Jun is the poor man’s version of MeatJun. I think it was dreamt up in Hawaii because I haven't seen it anywhere else. In my opinion, hamburger jun taste like a beef bulgogi burger with a meat jun finish. Delish! This was one of the first things that I cooked when I moved out on my own. It fulfilled all the important criteria that mattered back in the day... It was cheap, fast and easy, with a punch of flavor that would keep my popularity rating high, at least in the kitchen. So if you are craving the flavor of meat jun, but only have the budget for a pound of ground beef, this recipe is your new best friend. You could make these as I have for years, egg dipped and fried, or you could simply shape them and cook them on the bbq or under the broiler for a no fry version. Either way would be delicious. But don’t skip the sauce it really kicks up the flavor (and after you make the base sauce, consider adding some or all of the options). I have never thought to eat these with anything but rice (my Hawaii roots) until today when I looked outside and saw the sun shining (rare experience in Oregon). It got me thinking… I bet this flavor packed burger would be absolutely delicious between a bun. HAMBURGER JUN – Korean Beef Patties The Patties 1 pound ground beef 2 Tbsp. green onions, minced 1 tsp. garlic, minced 1 tsp. ginger, minced 1 ½ Tbsp. soy sauce ¼ tsp. black pepper 1 large egg 2 tsp. brown sugar 1 tsp. sesame seeds, toasted 1 tsp. sesame oil Mix all the ingredients together and form into patties. The Egg Dip 2 large eggs, beaten ½ cup flour Place egg and flour in separate dishes. Coat patties in flour then the egg Cook over med low heat in a non-stick frying pan with about 1 Tbsp. oil. Poke holes on the back side of the burgers with a chop stick so they will cook evenly. Wipe out pan in between batches. The Korean Vinegar Sauce 2 Tbsp. soy sauce 1 Tbsp. sugar 1 Tbsp. white vinegar Dash black pepper 1 tsp. toasted sesame seeds *At this point the sauce is finished. or You can add any of these optional additions to kick up the flavor if you choose. 2 tsp. Ko Choo Jung paste, this will make it spicy ¼ tsp. ginger, minced 1/8 tsp. garlic, minced 1 Tbsp. green onion, minced Place all ingredients in a bowl and mix well to dissolve sugar. Pour into small dishes and serve along side the meat for dipping. To toast sesame seeds; Place them in a dry pan over med low heat and move them around until they are golden brown.

Andagi is an Okinawan deep fried doughnut. It is also known as "sata andagi." Andagi is the Okinawan term for all deep fried dishes, anda is Okinawan for oil. Although Okinawans in Hawaii use the term andagi only to refer to sata andagi, savory as well as sweet deep fried foods are all properly called andagi. Ingredients: 4 cups flour 4 teaspoons baking powder 2 cups sugar 1/2 teaspoon salt 1/3 cup evaporated milk 2 tablespoons vegetable oil 1 teaspoon vanilla 4 large eggs, slightly beaten Vegetable oil, for deep frying Instructions: Combine flour, baking powder, sugar and salt. Make a well in center Combine milk, oil and vanilla in a measuring cup, then add enough water to make 1 cup of liquid. Add eggs. Pour into well the dry ingredients. Mix by hand until barely moist. Preheat oil to 350 degrees then lower to 330 degree F. Drop dough by hand, or use a large spoon or ice cream scoop. Fry until golden, about 8 minutes. Andagi is done when a skewer or chopstick poked into the center comes out clean. Drain on paper towels. Makes 4 dozen. So ono when it's hot and crispy right out of the oil!! Let's kaukau!! :)

I didn't do any cooking this weekend...what a shock! But we were quite busy this weekend! Instead, I'll be posting an old recipe that I haven't added to this blog yet. Beef Broccoli Cake Noodle Cake Noodle Oil Saimin Noodles (I used S&S Saimin but any freshly boiled egg noodles, or non-dry vaccum sealed such as yakisoba like this would work too, but I also heard you can use dry ramen packets too, but I didn't try) 1) Heat skillet drizzle with oil evenly on the base of the skillet. 2) Spread noodles evenly on the skillet and let it fry, pressing down with spatula from time to time (like a pancake), about 3-5 minutes or until bottom is golden brown. 3) Flip the noodles over and continue to cook on the other side, pressing down with spatula again. At this time, you may add more oil if the previous oil had been absorbed by the noodles, about another 3-5 minutes, or until the bottom is golden brown. 4) Remove from skillet and let it cool on paper towel. 5) Cut them into squares and place them on a serving plate. Beef Broccoli (measurements are not exact, this is how my mom taught me, she made us memorize the ingredients but never gave us measurments. LOL!) 3/4 cup of sliced beef 1 tbsp shoyu 3 tsp oil 2 tsp salt 1 tbsp sugar 3 tsp cornstarch 1 cup of broccoli (cut into big chunks) 1 tbs cornstarch mix with 1 tbs water 1) In a bowl, add in sliced beef, shoyu, oil, salt, sugar, cornstarch and mix well (with chopsticks), let marinate for 20-30 mins. 2) Meanwhile, blanch broccoli until desire doneness. 3) In a large greased skillet, add in beef (and it's sauce) and stir until 3/4 cooked. 4) Toss in blanched broccoli and continue to stir fry. 5) Add in cornstach and water mixture and let it heat through until sauce thickens. 6) Pour entire beef broccoli content (with sauce) over the fried cake noodle. 7) Serve! It's alot of oil in the cake noodle, but it's so delicious! You can also try it vegetarian style such as Hapa Bento's Cake Noodle with Fried Tofu. Yesterday we did a costco run and we picked up a tray of frozen Meat Lasagna so that was our dinner last night. That is usually WAY to much lasagna for the 3 of us, so I got to take some for lunch. I fixed up this bento last night in my new bento box I purchased for US$7 from Don Quijote. Top tier contains romain lettuce with flower carrots and grapes, bottom tier contains lasagna with cheese autumn shapes and garlic bread. What a well rounded meal! AND I got to carry put it in this cute bento container! They said both the top and bottom container (minus the lids) are microwavable! How awesome is that! Lastly I'd like to share a tip on how to freeze your ground beef. I like to buy ground beef in bulk because it's cheaper. But with the size of my family, I can't cook them all at once and I normally separate them and put them into the freezer for later use. I often buy ground beef that is closest to 6 pounds, like 6.1 lb or 5.9 lbs or similar, this is so that it is easier for me to divide them up into 1 pound each and place into storage plastic bags. Once I divide them and place each pound separately into the freezer storage bags, I flatten them out to fill up the entire bag. I did this for 2 reasons: 1) to save space in your freezer and 2) It will thaw quicker and more evenly than when it's in a ball or clump. Don't forget to mark the date on the bag before putting them in the freezer!! Oh and I just realized I never did publish my fried rice and grill pork post. I was looking all over for this when I was trying to link my last post's fried rice...only now I realized I didn't publish it. Must be old age! Oh well, here it is!
