这北马的传统糕点 ~ 摩诃粿 连曾经在那儿求学的我 竟然不知有此糕点的存在 在那里两年的时间 不曾看过 更不用说是品尝了 会发现这款糕点 是在年头的时候 无意间看到部落格格友之前的作品 当时我有记录下来 方便日后可用得着 最近有好多网友都在分享这糕 让我也起了想做的念头 来吧~ 开动! 我做了迷你版的摩诃粿 纯粹只是想做来尝尝它的口感 味道 这还蛮好吃的 像馒头的 《摩诃粿》 口感比馒头软一些 不粘牙 分享取自:Yellow Face Women 我做了原食谱一半的分量 材料 A (面种) 普通面粉 250g 水 180g (250g x 70%) 即溶酵母 1 tsp 材料 B 幼白糖 200g 碱水 ½ tsp 双倍发粉 2 tsp 普通面粉 300g 白油 2 tbsp 水 3 - 4 tbsp **注:想做黑糖(红糖)摩诃粿,可用 140g 的黑糖 + 60g 的白糖代替。 做法: 1。材料(A)面种:即溶酵母溶于水中,加入面粉拌至水份消失成团即可。 2。盖好待发酵 8 个小时。 3。发酵好的面种(约400 - 430g)首先加入材料(B)的幼糖揉至糖溶化。 4。然后把其余的材料全部拌匀成团。水的份量依照面种的湿度自行调整。 5。将面团移到桌面上搓揉成表面光滑的面团,整成圆形,盖上保鲜膜休息 15 分钟。 6。面团休息后搓成长条形。 想做混色的,可分出小面团做出喜欢的颜色,包在中间卷起。 7。用转和扭的方式揪出面团,截口朝上。 8。直接放在蒸笼里,不用做最后发酵,大火蒸 15 分钟即可。 混色摩诃粿(如上图) ** 将发酵好的面种分成两份,即每份约 200g。 黑面团 面种 200g 幼白糖 30g 黑糖 70g (过筛) 碱水 1/4 tsp 双倍发粉 1 tsp 普通面粉 150g 白油 1 tbsp 水 2 tbsp 白面团 面种 200g 幼白糖 100g 碱水 1/4 tsp 双倍发粉 1 tsp 普通面粉 150g 白油 1 tbsp 水 2 tbsp ** 以上黑面团和白面团依做法(2)和(3)各别搓成光滑面团。 ** 从白面团里分出一小团面团,加红色素继续揉,就成为红面团了 黑糖摩诃粿:黑面团 + 小部分白面团 + 小部分红面团 白糖摩诃粿:白面团 + 小部分黑面团 + 小部分红面团 转扭方式揪出的面团就是这样啦~
