Ci sono viaggi che ti portano alla scoperta di qualcosa di unico ed affascinante, ci troviamo in Val d'Aosta, a portarmi qui è stato il Primo posto che mi sono guadagnata con la mia ricetta "Assolo di Fontina" al Concorso Fontina Valle d’Aosta indetto dal Blog Un Architetto in Cucina in collaborazione con l’Assessorato all’Agricoltura e Risorse Naturali della Valle d’Aosta, il premio per i primi due classificati era uno splendido blog tour alla scoperta delle bellezze, gastronomiche e non solo, di questa regione; in pochi giorni abbiamo esplorato il territorio, abbiamo degustato i prodotti tipici e siamo andati a vedere come vengono realizzati, un viaggio fantastico tra fiocchi di neve e paesaggi indimenticabili. Oggi vi racconterò della Fontina, un formaggio unico al mondo, prodotto nell'incantevole scenario valdostano. Foto by: Tascapan Tra le cime innevate della Val d'Aosta, tra soffice neve e panorami mozzafiato, l'inverno stagiona la Fontina, a fare da sfondo alle forme di formaggio sono caverne o miniere in disuso, una location magica che rende questo prodotto unico. La Fontina ha origini medioevali, inserita nell’elenco dei prodotti Dop, viene prodotta esclusivamente in Val d'Aosta, è un formaggio grasso a pasta semicruda, realizzato con latte intero crudo di bovine di razza valdostana pezzata rossa. Questo è quello che tutti sanno sulla Fontina, certo, vedere le mucche al pascolo l'estate, che brucano erba fresca sulle cime dei monti, tra aria pulita e cielo blu, o leggere semplicemnete il disciplinare di produzione sono due cose completamente differenti, come differenti sono i risultati, se la Fontina è prodotta in alpeggio, ovvero in estate, quando le mucche pascolano libere cibandosi di fiori ed erba fresca, ed il latte viene lavorato direttamente agli alpeggi, tra i 2000 e i 2500 metri di quota, il risultato sarà un formaggio cremoso, dolce, profumato, con sentori di erbe di montagna, fiori e frutta fresca, il colore sarà giallo intenso, la pasta morbida e burrosa, questa è una Fontina che si presta per la realizzazione di ricette dal sapore delicato o per essere gustata con un ottimo bicchiere di vino bianco e del miele di bosco. Se la Fontina invece è prodotta a fine stagione, e non in alpeggio, allora il risultato sarà un formaggio prodotto con latte di mucche nutrite a fieno, con una pasta elastica ed un colore quasi bianco, il sapore sarà meno dolce, più secco e deciso, con un retrogusto di noci e frutta secca. In foto: Fontina fresca appena messa a stagionare Il latte deve essere lavorato sul posto, immaginatevi che lavoro è farlo in alpeggio d'estate, deve essere crudo, intero, proveniente da una sola mungitura e ancora caldo, la lavorazione deve avvenire entro due ore dalla mungitura. La Fontina d'alpeggio, la più pregiata, la si consuma subito, va letteralmente a ruba, la sua consistenza e la sua dolcezza si prestano ad una consumazione rapida, mentre la Fontina classica, prodotta con latte di mucca nutrita a fieno, si presta alla stagionatura, le forme stagionate a volte anche per 2 anni, acquistano sapori più decisi, note di legno, noci tostate e nocciole, profumo di bacche ed erbe di bosco, stiamo parlando di un tipo di Fontina che si presta ad essere utilizzata in ricette dal sapore deciso, servita in abbinamento a frutta secca e confetture, questo è un formaggio da gustare con un vino pregiato, un ice wine magari. In ogni caso le mucche si cibano di alimenti naturali, niente farine o mix industriali, il che fa una notevole differenza. Il mio ultimo viaggio mi ha portata a Valpelline, in un'antica miniera di rame, utilizzata fino al 1946 e ad oggi trasformata in magazzino di stagionatura, i binari dell'ex miniera non trasportano più rame ma forme di formaggio, qui l'umidità che sfiora il 90% è perfetta per far sì che la Fontina, adagiata su tavole di abete rosso, stagioni perfettamente, la temperatura non supera mai i 10°. Al momento della nostra visita l'intero magazzino di Valpelline ospitava circa 34.000 forme, su un totale di circa 350.000 forme prodotte ogni anno, che ogni giorno vanno spazzolate con acqua e sale, un lavoro lungo e meticoloso che da vita ad un prodotto unico al mondo. Una delle cose che più mi ha colpito della mia visita in Val d'Aosta sono i profumi: il profumo della neve, dei formaggi, dei salumi appesi a stagionare, era tutto così unico! La visita al magazzino di Valpelline è stata emozionante, ritrovarsi in quella che era, fino alla seconda guerra Mondiale, una miniera di rame, in vicoli scavati nella pietra che si addentrano nel cuore della montagna, con file di forme di formaggio che sfioravano il soffitto e si estendevano per i vicoli a perdita d'occhio, nel completo silenzio, interrotto solo dal ticchettino di alcune gocce d'acqua, circondati da così tante forme di Fontina da non riuscire a contarle ci ha fatto capire quanto lavoro ci sia dietro a ciò che ci ritroviamo sulla tavola. Ogni forma è tracciabile, riporta infatti un codice, una sorta di carta di identità che ci dice se è stata prodotta o meno in alpeggio, chi è il produttore, e se è stata fatta di giorno o di notte, praticamente sappiamo tutto, certo, quella che ci ritroviamo davanti non è ancora Fontina, per diventarlo devono trascorrere almeno 3 mesi di stagionatura, in queste grotte umide costellate di piccoli ruscelli, le forme poi dovranno passare un severo controllo: ogni forma verrà sottoposta a piccoli colpetti sulla superficie, si controllerà la leggibilità del codice che ne attesta la provenienza di produzione, dopo aver pesato e misurato il formaggio verrà poi meticolosamente controllata la crosta, che dovrà risultare uniforme, perfetta, senza tagli o screpolature e presenza di muffe, si effettuerà quindi un piccolo carotaggio per estrarne una strisciolina, così si controlleranno occhiatura, morbidezza e profumo, si piegherà poi tra le dita, se si fletterà senza spezzarsi avrà superato l'esame, solo allora verrà marchiata e messa in vendita; le forme che non superano la selezione, ugualmente eccellenti, ma magari più compatte o con occhiatura irregolare e più grande, verranno invece messe in vendita con il nome di "Formaggio Valdostano". La Cooperativa Produttori Latte e Fontina nasce nel 1957 con l’obiettivo di raccogliere, stagionare e commercializzare il prestigioso formaggio, inizialmente furono 46 i soci fondatori, mentre oggi se ne contano circa 200 tra aziende private, caseifici, latterie e alpeggi. La Fontina, in particolare quella d'alpeggio, possiede un elevato valore energetico, un buon apporto di Sali minerali, Omega-3 e Omega-6, vitamine A e B e batteri lattici vivi, con un ottimo apporto di Calcio e Fosforo, questo lo rende un alimento completo e digeribile, per chi soffre di intolleranza al lattosio, può essere utile sapere che l’Associazione Italiana Latto-Intolleranti (AILI) ha pubblicato una lista di formaggi «a basso contenuto di lattosio», tra cui insieme ai formaggi stagionati, compare anche la Fontina, tuttavia, come è specificato anche nel mio nuovo libro uscito da poco più di un mese: "La cucina senza", è bene fare una precisazione: la tollerabilità di questi ultimi varia da individuo a individuo, perché comunque contengono lattosio, seppure in quantità minime. Se volete anche voi visitare l'ex miniera di rame di Valpelline è possibile prenotare una visita, il costo è irrisorio, solo 3€, vi faranno anche visionare un filmato in un insolito cinema, interamente costruito in legno in una piccola baita, alla fine della visita potrete acquistare un po' di formaggio da portare a casa, il prezzo è assai conveniente, va dai 14/16€ al kg per la pregiata Fontina d'alpeggio ai 10/12€ della Fontina prodotta con latte di mucche nutrite a fieno, entrambe sono fantastiche, ed ovviamente sarà possibile degustarle prima dell'acquisto, nel piccolo ma fornito store troverete anche fonduta, fonduta al tartufo, formaggini, burro e altre bontà prodotte in loco.
