Suele ocurrirle a este cocinero brillante que aquello que de entrada se ha propuesto acaba transformándose en algo totalmente distinto a causa de su entusiasmo desmesurado y el obsesivo afán de perfeccionismo. ¿Patológico? Tal vez, pero nunca se han quejado de ello sus clientes. Junto al clásico vermut (combinación de la casa, a base Martini Rosso y Gran Lusso, la botella que ha creado la marca italiana para su 150 aniversario), podría servir una corteza grande, de las que te trasladan a aquellos tiempos en que te tocaba bajar a la churrería del barrio en busca de la bolsa de patatas y la de cortezas de tamaño familiar que acompañarían la gaseosa con un chorrito de cerveza. Pero por qué no dar un paso más y preparar una corteza gigante con mermelada de limón amargo y descubrir un atractivo contraste de sabores. Podría servir una buena aceituna, hasta una tan rematadamente sabrosa comola Xillu, rellena de anchoas de L’Escala, pero prefiere seguir el juego bulliniano de las esferificaciones ofreciendo dos variedades distintas, la rellena de anchoa y la gordal, blandas y gustosas. Podría hacer un guiño a la mezcla castiza para preparar un buen bocata de calamares. Pero ha preferido probar y probar hasta dar con el mejor bocadillo de calamares que muchos hayamos podido comer, con su toque de alioli y salsa kimchi. En la nueva vermutería nada es tan sencillo como aparenta, fíjense en la cantidad de personal que atiende ese local cuya decoración rinde homenaje al mítico establecimiento de la cala Montjoi con fotos y documentos; hasta algo tan sencillo como el paté de jamón contiene chispa y buen producto. Adrià quiere apostar por los ahumados, qué buena la caballa, las salazones, el carbón y el escabeche para trabajar la materia prima. Pero podría darle otra vuelta de tuerca.
