Here are the proportions for a near-double batch: 3+ lbs. rhubarb to yield about 2.25 lbs. trimmed/cut 2.5 cups sugar 1.75 L bottle vodka Notes: When I made this recently, I realized after a few days the color had been leeched from the rhubarb but the hue of the schnapps was not very vibrant. This was because I had started with rhubarb that wasn't very pink to begin with. So, I bought some more rhubarb—the brightest pink stalks I could find—chopped them up and added them to the jar... worked like a charm. SO, try, if you can, to start with pink stalks.

Kszysztof Jaracz 80 dkg świeżej słoniny 3 dkg soli peklowej 2 dkg cukru 5-6 ząbków czosnku 1/2 łyżki suszonego majeranku pieprz mielony sól Sposób wykonania : Mięso i słoninę zemleć w maszynce o dużych oczkach. Czosnek obrać, drobno posiekać. Zmielone mięso, słoninę , pokrojony czosnek, cukier oraz sól peklową wsyp do większego garnka. Dopraw do smaku pieprzem, majerankiem i solą , dokładnie wszystko razem wymieszaj. Odstaw na co najmniej na 12 godzin do lodówki ( 2-6 C ). Po tym czasie, wymieszaj jeszcze raz masę kiełbasianą i napełnij nią wyparzone słoiki ( 0,5 L ) dość mocno ubijając ją łyżką. Szczelnie zamknij nowymi, wyparzonymi wieczkami. Na dnie szerokiego garnka ułóż ścierkę, na niej poustawiaj słoiki i zalej wodą do 3/4 wysokości. Przykryj garnek pokrywką i wstaw na gaz. Od chwili, gdy woda zawrze, przykręć nieco płomień i pasteryzuj odpowiednio długo ( 60 minut ). Następnie pozostaw słoiki do wystudzenia w garnku, zimne ponownie pasteryzuj po 24 h ( 40 minut ). Tak zakonserwowane mięso możesz przechowywać w lodówce nawet przez kilka tygodni. Po otwarciu słoika pięknie pachnie i wybornie smakuje ! Lepiej niż tradycyjna kiełbasa w jelicie. Rada : Po kolejnych 24 godzinach można pasteryzować jeszcze raz przez 30 minut. Po trzeciej pasteryzacji trwałość produktu wynosi aż 6 miesięcy i można go przechowywać bez lodówki. Pasteryzacja taka nazywa się Tyndalizacja, pasteryzacja frakcjonowana. Doskonale nadaje się na wycieczkę lub podróż zamiast konserw ! Życzę smacznego !

Dieses Rezept habe ich in der Sendung 'Lebensmittelcheck' mit Tim Mälzer gesehen, Landfrauen haben es zubereitet. Genau so hat meine Oma immer den Apfelkuchen gebacken und ich fand ihn immer sehr lecker. Zutaten 375 g Mehl 150 g Zucker 125 g Butter 1/2 Päckchen Backpulver 2 Eier, Gr. M 1 Prise Salz nach Belieben etwas Zimt Alle Zutaten außer dem Apfelmus mit den Knethaken des Handrührgeräts vermischen, bis sich Streuseln bilden. Backpapier in den Boden einer Springform einklemmen und die Hälfte der Streuseln hineingeben. Mit den Fingern oder einem kleinen Rollholz gleichmäßig verteilen und zu einem Boden drücken. 800-1000 g Apfelmus oder Apfelkompott Apfelmus draufgeben und mit den restlichen Streuseln bestreuen. Backofen auf 200 °C U/O vorheizen und den Kuchen auf mittlerer Schiene ca. 30 Minuten goldgelb backen. Meine Tips: nach dem Auskühlen noch mit Zuckerguß bestreichen, zubereitet aus Puderzucker und Zitronensaft das doppelte Rezept paßt perfekt auf ein Backblech Das Apfelmus habe ich selbstgekocht aus saftigen Boskopäpfeln und ein paar Birnen, im Blog findest Du das Rezept für Vanille-Apfelmus. Das Obst kleinschneiden, mit einem Schuß Wasser aufkochen und weichdünsten. Mit einem Pürierstab fein pürrieren und mit etwas Zucker abschmecken. Komplett auskühlen lassen, bevor es weiterverarbeitet wird. Es lassen sich auch andere Früchte wie z.B. Aprikosen und Pfirsiche verarbeiten.
