I was on facebook the other day and my friend Natalie mentioned that she loved Tongan chop Suey. When we first arrived here in Tonga, my friend Lini bought over some dinner...It was Tongan chop suey and we all TOTALLY fell in love with it. It’s a family winner. It’s simple and I’m sure the recipe varies ALOT, but this is my version: Ingredients:1 Tin of Corned Beef (approx 326g can) Lots of finely chopped fresh Garlic (5-6 cloves...more the better!) Lots of finely chopped fresh Ginger (about 3-4 tablespoons) 2 Carrots finely diced 1 Large Capsicum (Bell Pepper) finely diced 1 pkt Vermicelli rice noodles Boiled water Approx ½ Cup dark Soy Sauce 1 heaped teaspoon of Brown Sugar (optional but does make a difference) Streamed Rice to serve *Note – These are approximate measurements and by taste only. You might want to add more or less. This amount feeds about 4 Adults and a few kids :-) Heat some oil in a pan Sort through corned beef and remove any fat etc. Fry for a minute then add garlic and ginger Once garlic and ginger are cooked add diced carrots Then add diced capsicum Mix well and slowly cook while you prepare the noodles Pour some boiling water into a large bowl Add vermicelli noodles Stir, then start cutting the noodles into smaller strips Drain noodles Add noodles to corned beef mixture Mix brown sugar in soy sauce Add soy sauce mixture to noodles and corned beef Mix well and cook for 5 mins on low heat Serve on top of steamed rice. (sorry I have no finished photo...we were too hungry and ate it straight away) We were able to share this yummy meal with one of my old friends from school Pania and her brother Ben. They are here in Tonga on holiday... so it was fun to hang out with them and reminisce about old days as well as catch up on the last 10 years.

Our old neighbor was from Tonga and his wife made these rolls and would share with us because my husband lived in Hawaii for a couple of years and grew to love the food there. I sometimes make my own homemade rolls recipe #103547 or the frozen Rhodes rolls. If you use the frozen dough, let them rise completely and then pour the sauce over the top and bake according to the directions. Same with homemade rolls. Rise completely and then pour sauce on and bake as directed. These rolls are sweet. Prep time listed is only for combining the ingredients for coconut sauce.

Kelly Boy & Leolani Delima of Kapena joined us on the island of Lanai for a special episode of Cooking Hawaiian Style making this Tongan dish call lu pulu to pay tribute to his Tongan brothers. Also, for the jam I used my home made strawberry freezer jam, but I don't see why you couldn't use any flavor. INGREDIENTS: 6 c flour 6 tbsp baking powder 1 c sugar 3 sticks (1.5 cups) softened butter Milk Strawberry jam Mix all dry ingredients in a bowl, add milk a little at a time until you get somewhat of a slightly sticky consistency (like pie dough). Roll out dough into rectangles about a half inch thick (mine where pretty large over all, I had a lot of dough). Spread jam on top and fold. The picture below gives you a better idea of how it was folded, but essentially all you are doing is bringing one side to the center, and then fold the other side on top of that. Place pie on top of a lined cookie sheet and bake for 25-30 minutes at 365 degrees fahrenheit (edges should be light golden). Let pie cool down for a bit and enjoy!!

Tasty roti in 30 minutes Preparation time: 10 minutes Cooking time: 20 minutes Ready in: 30 minutes Recipe yield: 12 big rotis' Serves: Six people Ingredients: Four cups of boiled water 3 cups of normal flour Margarine or ghee Cooking equipment: Girdle or roti iron or hot plate 1 basin 1 cup 1 tbl spoon rolling pin flat, smooth board or surface Directions: 1. Boil four cups of water 2. Scoop 3 cups of normal flour into a basin and sieve flour 3. Add three cups of boiling water into the flour mix and stir with a spoon 4. Keep mixing flour and boiled water with the spoon. Knead the mix until a dough is soft. Grease dough with margarine and knead the margarine into the dough again. 5. Heat the girdle until hot and grease once with margarine. While the girdle is heating up, roll out the dough into a strip and divide into prefered sized roti balls. In this case, big ones. Dab with a little flour to avoid sticking to the flat board. 6. Using the rolling pin, roll out the dough until thin and place on hot girdle. Turn roti over three times until light brown. Continue until all the dough is used. Avoid using too much water as this will make the dough stick. Too little water will make the dough hard. Instincts are very important. Recommended dish: Roti is best eaten with any type of curry. It is considered a staple food so it can be eaten for breakfast, lunch or dinner.
