Potstickers are so easy to freeze! Once you have folded the potstickers, lay them in a single layer on a pan or plate (something that will fit in your freezer). Cover with plastic wrap and then you can lay another layer on top. Just make sure that each layer has plastic wrap in between so that the dumplings don't stick to each other. When potstickers are completely frozen, you can gather them all up and store them in a freezer bag.When ready to cook frozen potstickers, do not defrost (you'll end up with soggy mess). Follow the instructions to cook the potstickers below. Add an additional 3 minutes to the "steaming" time to completely cook the frozen dumplings. They'll turn out perfect.

I thought I would post this old time recipe because it’s such homey comfort food. If you’re ever down, or feel a bit off, old recipes from childhood can bring back memories of love, safety and comfort. Those memories can actually make you feel better inside. Photo: Jasmine&Roses, Flickr ccl I remember this recipe from when I was very young. It’s fairly easy to make, is good for you, and doesn’t cost an arm and a leg. It also lets you serve a family of four with everyone being able to go back for more if they want. Of course my mother never used tarragon or Dijon mustard. For the life of me I really can’t remember what herb she would have put in. Maybe none... I do know that these two additions do not alter the wonderful homey goodness of this chowder. They improve it. Some people are afraid of cooking, or hate the taste of, fish. I assume that is from bad past experiences. The secret to great tasting fish is twofold and simple. First, ensure you purchase the freshest fillets you can. Fresh fish should have a translucency to it. It should not be “chalky." The less fresh the fish the more opaque it looks. The second is to never, never overcook fish, regardless of the type or method. Overcooking it, even in a chowder, can make it “tough” and almost “dry”– for lack of a better word. Follow these two rules and you’ll always have delicious success. I hope you like this recipe because it’s from the hearths of Nova Scotia and the heart of every country grandmother in the province. Enjoy! Nova Scotia Haddock Chowder total time: about 20 min | Serves 4-6 1-1/2 lbs haddock fillets 1 lg onion 1 stalk celery 5 medium potatoes 3 cups water 1 can (370 ml) evaporated milk 1/2 to 1 cup whole milk 1-1/2 tbsp Dijon mustard 1 tbsp fresh tarragon, or 1 tsp fried 1-1/2 tbsp butter salt and pepper to taste Melt the butter in a large stock pot. Chop the celery into fairly fine pieces. Peel and chop the onion the same way. Add to the pot and sauté until the onions start to brown. This should take about 5-6 minutes. While the onions are sautéing, peel and cube the potatoes into 1/2” squares. When the onions are done, add the water to the pot and add in the potatoes. The water level should just cover the potatoes. Add more if necessary. Add about 1 tsp each of salt and pepper. Bring to a boil, reduce heat to medium high and let cook for 10 minutes. Once the potatoes are cooked, add the evaporated milk and whole milk. Stir in the Dijon mustard and tarragon. Add another 1/2 tsp of salt to the pot. Cube the haddock into fairly large chunks. Add to the pot, stir gently and let the mixture come back just to a boil. Then turn off the heat. Stirring too much will break the fish pieces. We do not want that to happen. By the time it reaches a simmer the fish will be cooked. Do not overcook. Taste and adjust the salt and pepper if necessary. To serve ladle into bowls, place a bit of butter on top and sprinkle with more pepper. ........................................ Dried bean curd sticks make a fantastic vegan or vegetarian store cupboard supper. It might be surprising that all the main ingredients are dried in this incredibly flavoursome recipe - typical of many Chinese dishes. The highlight is bean curd - or beancurd or tofu - 'skin', which takes on the flavour of the braising liquid and has an intriguing almost omelette-like chewiness. The two different types of mushrooms in the recipe bring deep umami flavour, as well as adding another dimension of texture. It makes a quick, delicious and satisfying Chinese vegan meal. What is dried bean curd skin? Bean curd skin is the skin that forms on the top of soy milk when it is being made. The skin is skimmed off and dried to make dried beancurd skin. Sometimes it is sold in whole sheets to make dumpling wrappers, but it can also be rolled into sticks. Dried bean curd skin in the form of sticks is often considered a substitute to meat, however it is great used alongside beef or lamb in other slow-cooked dishes for a contrasting texture. What are the health benefits of dried bean curd skin? Dried bean curd skin is a fantastic meat alternative, soaking up rich umami flavours from soy sauce and mushrooms in Chinese stocks. Like tofu it is high in protein, low fat, high fibre and rich in vitamins and minerals such as B vitamins and magensium. Soy-based products are famous for helping to lower cholesterol. They are also high in isoflavones which are thought to reduce the risk of breast cancer and reduce the risk of osteoporosis post menopause. Cooking and serving the bean curd skin recipe The recipe takes around 25 minutes, of which much of the time is spent just leaving the ingredients to rehydrate, or simmer. Serve with a side of steamed rice, and perhaps some quick steamed greens or fried green beans with garlic. Different brands of bean curd skin sticks come in different lengths and thicknesses, and so soaking time might be different. Just check the beancurd skin is soft before you drain it.
