Hey everyone! I'm on a mission this year to try new recipes, and I mean really follow the recipe. So far I've made dips and soups, it's time for dessert! Coleen posted this frosting and the novelty of it caught my eye. I'm sure kids will LOVE it! How fun to match the color to the holiday, cherry for Valentine's and lime for St. Pat's sound great. This is a really fun project for a snowy day with the kids! (Yep, this pic is on my snow covered picnic table.) They'll be wide-eyed just watching the jello turn from red liquid to pink marshmallow fluff. It's a very light, silky icing that has the faint flavor of the jello. I used cherry, the color is bright pink with little flecks of red-very pretty! Coleen suggests this is best eaten the day it's made-not a problem. Notes: Try to not let the cupcakes touch, the icing will stick to each other and break off. Different jello brands (Royal, etc.) do not come in 3oz packs, so be sure to get the Jello Brand. ***Click HERE to sign up for email notifications! Jello Frosting 3 oz package Jello (pick your flavor/color, not sugar free) 2/3 C sugar 1 egg white 1 tsp vanilla extract 1/2 C boiling water (must be boiling to dissolve the sugar) Put everything except boiling water in the metal/glass bowl of your stand mixer fitted with whip attachment. Turn the mixer to high just as you add the 1/2 C boiling water. Whip on high for five minutes. I literally used a timer and #10 on my KitchenAid. Will frost 24 cupcakes or 9x13 cake.
